On Friday, February 10, 2017, I became concerned about meals being served at the SIPI Head Start site because Moses and I were talking and he told me that SIPI had not put an order in. I found this particularly concerning since he had covered one day and had a difficult time putting together the meal. Food items were not available for the preparation of the meal, some of the food items on hand were outdated, and many had to be discarded. Since a food order had not been placed and lunch required fresh produce, I became curious about lunch for today. I arrived at 11:35 am and the children were almost finished with their meal, which I found rather unusual since lunch was at 11:30 am. The lunch served followed the menu, Mexican Pizza with refried beans and mozzarella cheese, shredded lettuce, tomato salsa and apple wedges. My concern was the quality and handling of the food products. When I arrived in the classroom the romaine lettuce had strong smell, at first I wasn’t sure what it was. When I went into the walk-in area and saw the case with the spoiled romaine lettuce leaves that had been torn off and left in the case I knew immediately what the smell was. there was bell peppers and sweet potatoes that were past their prime and no longer acceptable. Initially, we had gone to the walk-in because Juanita said it was not working; however, the freezer was running at 9˚ F and the refrigerator was at 31˚ F. She had the freezer door propped open with a gallon of milk, saying that the food in refrigerator would freeze if she didn’t leave it open. The story didn’t make sense. Only one fan in the freezer section was working and probably would keep better temperature with the door closed. In addition, food (e.g., milk), should not be on the floor. A work order needs to be completed for the repair and the walk-in put out of service until the repair is made. Additional work orders need to be completed to shorten the drain pipe on 3 compartment sink, repair leak from booster heater underneath dish machine and fan on hood not working. These are safety concerns (i.e., backflow, slipping, & fire hazard). The kitchen was in a state of disarray, paper cluttered the counter where the computer is stationed.
An opened bag of potato chips was left on top. The hood above the range had lent dangling from the edges, evidence that it had not been cleaned in quite a while. According to policy, Hood and hood filters are to be cleaned on a weekly basis. The regular dishware was sitting on the table, with the eating surface side-up, while the children ate their meal on disposable dishware. No approval had been given and there was no acceptable reason for use of disposable. Debris was found at the bottom of both the reach-in refrigerator and the reach-in freezer. There was an ice tray in the freezer that was
unprotected. Then of final and most concern is the total disregard for the health and safety of the staff and children. I observed Juanita scooping the leftover beans into a yogurt container, I commented that we are not allowed to use non-reusable containers. The beans needed to be stored in a food storage container or a food storage bag. She said, “I know, but that’s what I do.” She didn’t care. She took the beans and threw them away. There were enough beans to serve for another meal, breakfast burritos. What a waste. I then went to meet with Stacie Barney, Service Specialist, and heard more disturbing news, she told me about Juanita serving cinnamon and spices to children and staff that are allergic, commenting that they are not that allergic.
Since I have been worked in Veteran Affairs Medical Center in Baltimore, Maryland, I was not surprised with the work load and the hospital setting at Millcreek Community Hospital (MCH). With a goal of enrichment my knowledge in a hospital pharmacy setting, I am enthusiastic in accomplishing the assigned duties. I have very high expectation during these four weeks of IPPE rotation; I expect to learn beyond what I already know in the past and apply what I learn during the past year in to pharmacy practice. Though proponents of this method argue that it has lowered meal debt and the amount of families failing to pay, Stacy Koltiska refutes this claim by saying: “[The ones making these policies] are suits at a board meeting… They are not the ones facing a child and looking them in the eye and taking their food away.” While it is irrefutable that debt in schools is a problem that must be tackled, it is not a justifiable excuse to take a child’s midday meal out of his or her hands and throw it into a trash can because his or her parents can not put money into their child’s lunch account. As a kid, I remember rushing out the door in the morning with one shoe on skipping while attempting to put the second one on with a flat tire. While I get in the car my mom says, “I’m late for work, we are going through the Burger King drive thru for breakfast.” Little did I know, there is not one good thing about the quality and nutrition of these foods, especially amongst kids who need all their essential food groups to grow. The next day I remember getting to school early, getting something to eat in the cafeteria before class. I glance down the line of kids, to be excited at the sight of pizza they were serving. Thirty one million kids nationwide eat school sponsored meals twice a day for a hundred eighty days and on average for twelve years. In this sense school lunches are an important and critical component of childhood nutrition and development. Yet these meals are highly processed and filled with chemicals and preservatives. School lunch rooms are essentially fast food restaurants; they unload shipments of frozen food then heat it up in glorified microwaves and serve it hot and ready. This is the same basic principle of fast food restaurants and people all know how terribly unhealthy fast food is for them. Still America feeds this toxic material to kids every day. This has been a tremendous issue for years but it is more devastating now than ever before.
Each and every daycare has their own menu for the children’s breakfast and lunch. Through my observations, I have noticed that the “Don’t Worry Childcare” has a variety of food selections throughout the month. For example, the children could either choose from fruit loops cereal, or frosted flakes for breakfast. The children’s snacks eaten varies every day as well. For instance, the children ate milk and cookies one day, and cheese crackers another day. An example of lunch would be, milk, chicken fingers, French fries, green beans, and mixed fruit one day, and spaghetti, corn, peaches, and bread another day. I observed the children eat ham, mashed potatoes, green beans, and peaches one day for lunch. All those food options seemed very delicious.
Many cafeteria workers and staff members in 49 states have said many students do not want the governments new school lunches. Almost 7 out of 17 schools with have been seen with students throwing away some or all their fruits or vegetables, even the cafeteria workers are suffering under these new standards. About 60.3 percent of school districts want flexibility to be given to all schools to improve their ability to provide and give good nutrition without harm to any instructions and school district operations. Schools should know by now what is good for students and what is not, but they should not go overboard with the wheat and whole grain items. Another example that shows that schools should be responsible for providing a nutritious lunch is knowing that there are a variety of ways to make healthy foods taste good for school students. Healthy tasty food that will risk diabetes and obesity .One of the biggest reasons people do not eat healthy foods is because they feel it as if it will not taste good. The problem is, if your health food does not taste good, you are eating the wrong health food. Just because something is good for you does not mean it has to taste nasty, boring, or completely gross. The Everfi Course that I completed a couple months ago taught me many things about technology and many ways to stay safe, but overall what caught my attention the most was how every section of Everfi related to the topics we were learning in class. It gave me a more clear understanding of what the lessons we were learning in class. For example, I remember how in the middle of second quarter my class and I were learning about how to stay safe when navigating through the internet and social media. At first, I thought that I knew everything on how to be safe on social media, but turns out I didn't. This was when Everfi made me realize that there are many ways to stay safe that we as teenagers and adults. In the Everfi section where it all about privacy and safety I learned that just because your settings and pictures are set to private and my eyes only it doesn't mane no one can see it.This turned out to be more interesting then I taught because at some point in my life of my years of using social media there were times when I would put a post or picture so that I could only see it, and I thought that I was the only one that saw it.Based on what I learned on ever no matter how private something is people will always have access to your stuff unless the type of social media really has settings where privacy is really real.
There are several takeaways from my recent CSI class. One, which is topmost in my mind, is that respecting one another is crucial. Our class was made of different ethnic backgrounds, different religions and different ages. We had different ideas and opinions but were able to feel safe in expressing ourselves without judgment. This was largely in part to the instructor educating us on the importance of being open to others ideas at the onset of class.

The summer program I used to complete my observation hours for the course of the summer was a youth development program offered in Dawsonville, GA. called Next Generation. and their mission is to provide an opportunity for positive youth development as well as access to resources and opportunities many children otherwise don’t have access to. They aim to use this program to provide mentoring for the youth, tutoring for afterschool assignments, and offer many opportunities as a prevention program to the advancement of vulnerable youth. Next Generation is open year-round for students, and have a smaller program available for the summer.
