Sushi has taken California by storm due to its healthy nature. Sushi uses fresh ingredients and the average meal is below 400 calories. California is known for people living healthy lifestyles. We can also see that sushi consumption across the country has increased each year. We plan to capitalize on this trend by creating a small sleek modern sushi restaurant called Nichibotsu. We have created a sushi restaurant that embodies the California spirit named Nichibotsu. Nichibotsu is a small bistro that has an open concept. Our restaurant will be located on the cliffs of Malibu and have a breathtaking view of the ocean. To keep with our modern feel our main colors will be black and white with hints of red. We will have a few Japanese painting around the restaurant, but we will have minimal decor and only red vase with a cherry blossom on the table. Our restaurant will be loud and your conversations will fill the air mixed with softly playing Japanese music. We will have overhead lights that are similar to paper lanterns. One quality that is involved in a restaurant is the atmosphere and the positive energy it gives off. Considering the Western theme, they have the restaurant well decorated from the entrance, to the place where you sit. The walls are painted with tumbleweeds on them, with great lighting that allows you to see, and not go blind. The plates and silverware are very nice, as is the food that goes into them.

Aside from meats, the main things that the Japanese eat are rice, seafood, and vegetables. The main meal Americans know about, is, of course, the famous sushi. In Japan and most authentic Japanese restaurants, California rolls are actually not the most common type of sushi. There are many types of sushi, such as tamago (egg) or inarizushi, which is sushi rice wrapped in fried bean curds. Sushi is always made with vinegared white rice and often wrapped in seaweed or with raw fish that can also be eaten individually as sashimi (“Food”). Wasabi, or green horseradish paste, is used to kill germs that may be remaining on the raw fish. Ginger is eaten after every individual piece as a palate cleanser. You know I never thought of grocery shopping as being a challenge or a skill until I had a house of my own and a family to care for. Today's grocery shopping trips in the Lambert household include my three children ages seven, four, and two tagging along. Wanting anything and everything. I use to enjoy grocery shopping and now it takes so much planning, memorization, and legit skill to get in and out within my set budget, and with getting everything on my list. After doing this for about seven to eight years with children I would consider myself a pro at grocery shopping!

Eating Responsibly To eat responsibly means to know what you are eating and knowing what you are putting into your body, whether it is healthy for you or not. It’s a sad fact that the typical American diet (high in meat and processed foods) is not healthy. There are a lot of different ways to stay healthy, but it can also be very difficult to follow a good diet plan all the time. I know that breakfast is the most important meal of the day, and I have tried to eat well before all of my classes.
