I originally wanted to work in the clinical setting because after taking my science courses, specifically Anatomy and Physiology, Biochemistry, and Medical Nutrition Therapy, I became very interested in the medical aspect of nutrition. I have a background in food service and after starting my independent study with Fairfax County Public Schools (FCPS), I have returned my focus back to this principle. I have realized that I would like my focus to be on preventative medicine/nutrition. I think the best way I can achieve this focus is by working with and educating children. If children can learn proper nutrition while they are young, they can prevent the diseases that arise from poor diet and sedentary lifestyles.
I hope to better learn the

The first presentation will be a kitchen staff training seminar on “Food Safety and Sanitation Standards”. I will train the kitchen staff at one of the local elementary schools on food safety and sanitation practices by demonstrating proper temperatures of different foods (hot and cold), thermometer calibration, and proper storage techniques. The second presentation will be a staff meeting presentation on “Benefits of Breakfast in the Classroom”. I will be educating elementary school teachers on the benefits that breakfast has on children thinking clearly, concentrating one learning and performing better in the classroom. The documentation that will be submitted for both these presentations will be the preceptor, audience, and student evaluation forms that I will create, a one-page self-assessment of my presentation, and any materials that I will use for this presentation, which could include photographs, printed materials, and data charts.
The second objective will be helping to launch the opening of a salad bar at a local elementary school. I will train kitchen staff on how to set up and tear down the salad bar, and take and record food temperatures. I will teach students proper etiquette for proceeding through salad bar lines and teach them portion control and how to make better food choices. The documentation that will be submitted is the preceptor evaluation form that I create, photos of the salad bar, promotional materials, and copy of the food temperature
I have been in healthcare for about 6 years now. I started off as a nutritionist in a hospital setting, working with patients of all health statuses. I worked closely with doctors to determine what meal plan would best suit each patient. I went to work day after day to meet a new group of patients who were previously admitted the night before; very rarely did I work long term with one particular patient. Although I enjoyed helping people change their eating habits and educating them on how to better their health, at the end of the day I felt like there was something missing; I wanted more.
Samantha is a thirty year old woman. She is a veteran triathlete who has raced in a numerous amount of long distance events. Since a young age, I always felt inclined towards pursuing a career in the health care field; daydreaming about myself working at a clinic or hospital and making a positive impact on someone’s life. When I started college, I decided to major in Biology and explored the different career options the health field had to offer me by shadowing dietitians, nurses, physicians, and other healthcare workers to find my ideal job.
Currently, I am a Practice Quality Support Coordinator and one of my roles is assisting practices in locating and outreaching to patients that need preventative services performed, such as a mammogram, colonoscopy, or follow up for patients with high blood pressure. By ensuring patients acquire these services, we can detect health conditions earlier, prevent trips to the emergency room, save money, and most importantly save lives. I am passionate about focusing on preventative care and encouraging a healthy lifestyle to each one of my patients. I have personally seen the power of exercise and a healthy diet in my brother’s life. Playing football and other forms of exercise has stabilized his blood sugars and led to a reduction in the amount of insulin he needs. I want to be involved in the education for newly diagnosed patients, as well as the management of their disease in everyday life.
I think this project was a great opportunity for me to learn how to educate and guide patient’s in making better nutritional decisions with the help of my using MyFitness Pal. I think MyFitness Pal is an excellent resource for any patient that is interested in improving their nutrition. Nutrition is often neglected by patient 's, therefore, as dental professionals it is important to use the latest technology to attract our patient’s to become more interested in their nutrition. The positive impact of this project has encouraged me to recommend using MyFitness Pal to my patient 's as a hands on activity to help correlate nutrition and the patient’s overall health. This project also allowed me to become aware of the poor food choices I made, which will help to benefit my patient’s that have a similar diet.
Proper nutrition is important in maintaining a long and healthy life. Most Americans are rushed due to their busy work schedules, and do not take the time to plan their diets properly. Like me, most Americans are unaware of the importance of eating a healthy diet and consume too many foods without the proper nutrients. Throughout my life I have been fortunate. I have not had any major health problems, and have been able to consume most foods without having to worry about gaining weight. These last two years, however, I started to gain weight and have become concerned with my diet. Changing my poor eating habits has been difficult for me, however, having this assignment has taught me that it is not as difficult as I previously imagined.
The late Nineteenth Century saw increased industrial growth in the United States. One of the major developments that led to the increased industrial growth was the expansion of the railroad. The railroad provided infrastructure that made it cheap to transport goods from one place to another. Investors could now build industries in different parts of the country and transport products fast and to a wide network of consumers. Another resource that fostered industrial growth was the influx of immigrants into the United States. During this time, many foreigners were able to come into the country and provide cheap labor for building industries thus reducing the cost of industrialization. In addition, the country was in need of vigorous development to cater for the needs of the growing population at that time.
Nutritionism is an ideology that believes that the nutrients in foods are the key to understanding them. Nutritionism believers are so focused on the nutrients that food contains that they forget about all other aspects of food. The problem is that consumers rely on packaging to tell them what nutrients a food provides, since nutrients cannot be obviously seen, and they rely on science to tell us what nutrients are good and which are “evil”.
Education plays a dominant role in the lives of students all over the United States. Since most students spend roughly eight to twelve hours in school, it is important to make sure that they are provided with a healthy and nutritious breakfast, lunch and snack.

I am inspired to explore the field of dietetics which is very broad and dietitians perform a variety of functions in their jobs. As a dietitian, I can work in a wide variety of positions such as a foodservice manager in commercial or institutional, a community nutritionist, such as the WIC and Headstart, a consultant to major food corporations such as Kelloggs and Kraft or go into sales. I am very interested in working in a position where I can help people develop habits to improve their health. I may eventually go on to graduate school to advance my knowledge of dietetics.
My goal in pediatrics revolves around determination to provide comprehensive and compassionate care. Nutrition is an important key to learn and understand in your life while you get older. Many people do not know the proper diet and exercise to keep their body healthy and strong. Throughout this course, I have learned information on different kinds of vitamins, carbohydrates, amino acids and other helpful diets. After reading and logging my dietary log for a week it has helped me re-organize my diet and health. I have learned about how to personally manage my exercise and diet and I am seeing some good results because of what I learned from this class. I started to see what I was missing in my diet and started to know what quantity and quality was for your diet. I also took a leap into my family health history to see what I need to change
