What would it take for you to open your own restaurant?? Many people have dreamed of opening their own restaurant, and many have tried, but what does it really take to do it? Who would you hire to do the job and do the job well? Those are some of the question many people want to know and I’m here to tell you. The how’s, the when’s, the what’s, and the where’s. When you are in this business, there a lot of things you need to know. So I’m here to tell you what I would do and how I would do it, if I decided to open up a restaurant. One of the things you and I will need in this business is patience, perseverance, a high tolerance for stress, and a sense of humor. If you have those four things, you can be successful in the restaurant business. It’s all about keeping the customer satisfied in every area and enjoying the job while you do it. Some may want Italian, Indian, Soul food, or even Spanish. The type of restaurant I want to open is a casual dinner restaurant. Chicken, collard greens, rolls, etc. and on some days we would have burgers and fries. I want to have foods that will keep the people coming back. I want to have a two-sided restaurant that would have two different scenes going on at one time. One side would be for the people that want to actually sit down and enjoy their food and socialize and the other side would be a lounge type setting where there would be a dance floor with a stage where people can perform. Stephen Boos has worked in the food service industry for over 30 years. He started as a bus person and subsequently trained as a chef’s apprentice. Steve’s mother believed that a college education was something that everyone should receive. She felt that a college degree was a good investment in Steve’s future. In 1976 at his mother’s insistence, Boos moved to Northeastern Ohio to attend Kent State University where he earned a bachelor’s degree in business administration. After graduation, Steve began working for East Park Restaurant as a line cook. Using his education as a foundation, Steve made a point to learn everything he could about running a restaurant, from cutting meat to the bi-weekly food and beverage orders. His versatility, keen business sense, and ability to control costs resulted in Steve’s promotion to General Manager, as role he has held since 1995.
Dave Thomas an American restaurateur and a philanthropist once said, “It all comes back to the basic. Serve customers the best-tasting food at a good value in a clean, comfortable restaurant, and they'll keep coming back.” (thomas). Everyone can agree on Dave Thomas, but I have a couple more criteria to add to his idea of a great successful restaurant. If I go out to eat I might as well pick a place that, though may be expensive, has scrumptious food because why bother going to spend money on food you can make yourself? A great restaurant has to meet three of my criteria’s: the Décor and atmosphere, impeccable service and cleanliness, and most importantly the food.

The restaurant business is a challenging industry and if a company has a strategy that works for them as well as their employees, it should stay the course and tweak as needed.
Restaurant manager is a responsible position and career which has several opportunities to accomplish. The manager has to manage the whole restaurant staff, has to be flexible in approach and promote motivation and performance among them for better restaurant productivity and profits. Complete dedication is essential to reach highest position in management and for this the person has to settle certain goals and improve the skills, values and qualities with time and market demands (Brawer eta l., 2012).
The end goal of this proposal is to come up with a food truck that will be located in Harrisonburg. A demographic will be targeted and marketed to. The food truck will not be tied down to one spot but will, move around the Harrisonburg area, based on the ever evolving market. The food truck will come up with a specialized menu with a limited variety, but focus on quality. Many people do not like the monotony of everyday food choices, and often look for new places. The food truck will try innovative choices that break away from the monotony of everyday choices. It will be the goal to offer a niche food choices that are unique and can be made quickly and affordable. Not only will the niche food be offered but along with drinks and sides that complement the main food offered.

When I first opened my restaurant I had no clue on how to get started. I knew nothing about inventory or purchasing food. I did somehow manage to get my cash in working order with the help of a instruction book. When we got the restaurant up to code, I got a lot of help from health inspector on how and what to watch for in my place of business.
