1. INTRODUCTION
A restaurant is a business formation which prepares and serves food and drink to customers in return for money, either paid before the meal, after the meal, or with a running tab. Meals are generally served and eaten on premises.

After a long day in school and studying, every student needs a night off to just relax and enjoy a meal at a restaurant. In this modern time, some aspects of a restaurant can be the deciding choice. Many choose their restaurant of choice based on either those they are with, their personal, cultural appetite, their routine eating habits or their mood. Some of these preferences are similar yet others are the deciding differences. Two common franchise restaurants that pose differences are Applebee’s and Olive Garden. These two restaurants present their differences in environmental and food options causing a choice between them.
I will be talking about Carmine’s Southern Italian Restaurant, Specifically the Theater District location where I work. Carmine’s located in the Theater District is a very successful establishment; I have met some of the hardest working individuals in my time of employment and have learned how the company works. They are a family style restaurant where all food is meant to be shared. Carmine’s implements a real good concept and I will be talking about all of things that help this business thrive and be a fan favorite in New York.
One reason to visit Carrabba’s Italian Grill is because as soon as one walks in the main lobby they will find themselves savoring the delicious smells of the cuisine they are preparing. With a wide variety of food on their menu, one can certainly have the best five course meal of their life. Two of the best appetizers are their delicious bread and herb dip and savory calamari. For the second and third course, patrons can choose from a wide variety of salads and soups. The main course is where things get real exciting.
Within the Brookfield’s Restaurant organization there is a problem of having a high turnover rate, which is dependent on employee’s motivation as well as how much they feel they are involved in the company culture. Since the restaurant is a fast paced food service industry that requires employees to be capable of handling the pressure of dealing with many customers’ demands while also providing a high level of service to each guest which can be hard for many, making them less motivated to work. Also, the company culture is important by making the employees feel welcomed in the company and to help support them while on the job, so as to the employees want to stay on the job and not wanting to leave. We will provide an analysis showing employee’s work motivations and involvement in the company culture to determine if these factors are the cause of the high turnover rate.
Restaurants have their own sets of unique obligations that they must face. Most states will require that the establishment be accredited as food service establishment. This will impose several requirements related to the building such as textiles, flooring, ventilation, storage areas, and even the number of exits that the establishment has (Mealey, 2016). Another important aspect to consider is whether or not the establishment will be permitted to serve alcoholic beverages. Through the combination of landlord, city, and county, many properties are not allowed to serve any alcoholic beverages on the premise (Mealey, 2016). Restaurants must also examine their lease agreement and local zoning laws to confirm they can indeed be open during their preferred hours of operations. Within the lease, a landlord may dictate the business’s hours of operation (Levey, 2017). However, a sales performance review in the year 2015 of new soft drinks introduced by Coca cola established that in Mount Kenya region, only 15% had succeeded, 55% were performing poorly, 17.5% had failed completely, while another 12.5% exhibited abnormally high artificial growth.(MKBL,2015) Despite the introduction of new products by the Company, its market share in the soft drinks market dropped from a high of 98% in year 2013, to a low of 93% in 2015 in Mount Kenya region, which included Nyahururu town. However this research did not study the effects of marketing mix variables of new Coca cola soft drink products on sales performance as it was out of scope. This study therefore, aimed at filling this knowledge gap by examining the effects of marketing mix variables of new Coca cola soft drink products on the company’s sales performance in Nyahururu town. It aimed at providing insights towards the application and integration of the marketing mix variables by marketing managers so as to achieve the envisaged goals. The research has been carried out using the research method discuss in chapter 3 methodology. The research method is interviewing the manager of the fine dining restaurant to find out how is service quality used in the restaurant and what are the point of view of the restaurant manager.
