As Thanksgiving approaches, most families begin preparing for the big feast. For most, this can be a stressful time. The anticipation of friends and family coming together can become overwhelming at times. Perhaps even more stressful, is the thought of cooking that perfect dinner. Traditionally prepared as the main dish, the turkey can be the turning point of a great or poor Thanksgiving. Much easier said than done, cooking the ideal plump and juicy turkey is by no means a simple and effortless task. Nevertheless, especially the for the first time turkey-cooker, having the right cooking appliances and general understanding on the art of preparing a turkey could make this seemingly daunting task into an enjoyable and educational experience.
A delicious lip-smacking turkey takes at least several days to prepare. When deciding on what turkey you plan on buying, consider the different types as well as varying sizes that can be purchased. Different types of turkeys include frozen, fresh, organic turkeys to mention a few. For the average joe, distinguishing between different turkeys that have been cooked with spices would be almost impossible and thus, one should not fret over which turkey to buy. However, if you so choose to buy a frozen turkey, note that the turkey must be defrosted before you can add spices or cook it. For refrigeration thawing, let the turkey thaw for about 24 hrs for every 4-5 pounds. If you do not have room in your refrigerator, another option is cold water thawing. In doing this method of thawing, let the turkey be completely submerged in cold water for approximately 30 minutes per pound. After thawing the turkey, the turkey will be ready to be seasoned.

All steps in the turkey preparation journey are equally important. Remember, there’s nothing worse than tell your hungry guests that there is no turkey because you forgot to get a roasting pan or that the turkey burst into flames because you were too caught up with the conversation and forgot to keep track of the time. What you will need for the seasoning mix is: 1 tablespoon sweet paprika, 1 tablespoon dry mustard, 2 ½ teaspoons dried sweet basil leaves, 2 teaspoons of salt, onion powder and garlic powder each; 1 ¼ teaspoons dried oregano, 1 ½ teaspoons thyme leaves, ¾ teaspoons of black pepper and ½ teaspoons of white pepper and cayenne pepper each. That was the seasoning mix; you still need meat and veggies. That list contains: 1 pound of chicken breast’s, cubed into ½-inch pieces, 1 pound of fresh peeled medium shrimp, 2 cups of chopped green bell peppers, chopped celery and defatted seafood stock each; 3 cups of chopped onions, sliced okra, chopped collard greens, and defatted chicken stock each; 1 cup each of apple juice, 3 bay leaves, 6 cups of chopped mustard greens, and cooked long grain white rice and 6 tablespoons of all-purpose flour, browned. When the great holiday of Thanksgiving comes to mind, most people think of becoming total gluttons and gorging themselves with a seemingly unending amount of food. Others might think of the time spent with family and friends. The whole basis of the holiday is family togetherness, fellowship, and thankfulness for blessings received during the previous year.
Food is an important part of Thanksgiving. One similarity I have with people is that we eat green beans and mashed potatoes. Next, I share having corn and stuffing with a little bit of peers. Lastly, I share having cranberry sauce and mac and cheese with a couple of my classmates.

Thanksgiving, traditionally, is a time of gathering families together to express our gratitude for one another over a large roasted turkey. According to the Huffington Post, one fifth of the total 235 million turkeys eaten in the United States are consumed on Thanksgiving Day (1). There are a number of different theories on how the turkey got its name. Some people say that Columbus thought that the land he discovered was connected to India which was known for having large flocks of peacocks. When he saw these strange large birds he thought they were related to the peacock family so he named them Tuka, which means peacock in the language of India (2). Others say that the name came from Native American’s calling them Firkee, which was later adapted to Turkey (2). Another theory is that the birds did not come directly from the New World to England. Instead, they came via merchant ships from the eastern Mediterranean Sea which were called ‘Turkey Merchants’ because a lot of the area was a part of the Turkish Empire at the time. Purchasers of the birds back home in England thought the fowl came from the area so they called them ‘turkey birds’ and soon after just ‘turkeys’ (2).
I take the turkey and set it on the counter. Then I grab the Buttermilk White bread, freshly made by my mom. She’s like Martha Stewart, you know. She grows the wheat herself. She uses some kind of mill we have in the back yard to grind it into flour. We have a cow. She milked it herself. Then she made the buttermilk to put into the bread. Anyway, that’s off the subject.
A big part of Thanksgiving is a Thanksgiving feast. The feast usually consists of potatoes, corn, sweet potatoes, peas, gravy, stuffing, salads, buns and lots of other great food. The main part of the feast is usually the turkey. Other families might have ham, roast beef, duck or chicken. The dessert that is most likely to follow the feast is pumpkin pie. Other people may choose different desserts and food depending on their customs and beliefs for which they choose to give thanks. Let’s not forget the biggest and most important reason for this holiday – giving THANKS! People usually give thanks for everything they have. Their jobs, health, families or just being alive are just a few of the things that people give thanks for.
Kurdistan is a region that has existed in turmoil and is the “never was” country. The Kurds are the fourth largest ethnic group of the Middle East, numbering between 20 and 25 million. Formal attempts to establish such a state were crushed by the larger and more powerful countries in the region after both world wars. When the Ottoman Empire collapsed after World War I, the Kurds were promised their own independent nation under the Treaty of Sevres. In 1923 however, the treaty was broken allowing Turkey to maintain its status and not allowing the Kurdish people to have a nation to call their own. The end of the Gulf war, Iran-Iraq war, the collapse of the Soviet Union, and the end of the cold war has reinvigorated a Kurdish Nationalist movement.
Morocco,is a country in the northwestern corner of Africa. It is bordered by the Mediterranean Sea on the north and the Atlantic Ocean on the west. The Strait of Gibraltar, which connects the Mediterranean and the Atlantic, separates Morocco from Spain by only about 8 miles (13 kilometers). Fertile plains lie along Morocco's coasts, and forested mountains stretch across the middle of the country from southwest to northeast. Beyond the mountains lies a sun-baked desert, the Sahara. Rabat is Morocco's capital, and Casablanca is the largest city. Nearly all Moroccans are of mixed Arab and Spanish descent. But the people make up two distinct ethnic groups--Arab and Spanish--depending mainly on whether they speak Arabic or Spanish. Almost all Moroccans are Muslims. Farming is the chief occupation, and more than half the people live in rural areas. France and Spain controlled Morocco from the early 1900's until it won independence in 1956.

Albania: The Development of a Developing Country Albania, a small country located in Southeastern Europe, is a nation that does not have a true identity – its people are Muslim and Christian, it is a country that is both poor and poor, it is as urban as it is rural, and has evolved from monarchy to socialism and now to fledgling democracy. In other words, Albania and its people have seen it all. The extremes of Albanian society are vivid, and underlying tensions are evident. But Albania is not “another Yugoslavia” – there is no doubt that the internal environment of Albania has been and somewhat continues to be tense, although the breaking point has never been fully reached. Albania is a country with a fervently tense past (especially during the Cold War era), yet many people do not know about it, and few would be able to find the country on the map.
Good cooking doesn’t always come naturally, but when skill’s and/or talents are perfected strengths such as cooking can become fun or even a hobby. Good cooking is something that takes time and skill and good cooking can’t be rushed otherwise the food does not come out the way it is supposed to. Another key factor of good cooking is to always know what is going on and what the next step in the process is.
