1. Introduction:
I have chosen Food Irradiation as the non-thermal food technology that shows promise for food applications. Non-thermal methods of food processing have become very interesting to those involved in the food processing industry in the last few years. Thermal methods usually dominated the food processing industry; however, these methods can have an effect on the food flavour, texture and nutritional values. However non-thermal methods are becoming more popular as there is minimal impact on the nutritional value or the flavour, texture and odour of the foods. These methods can also extend shelf life as they kill more microorganisms, while being more energy efficient. I will discuss the types of Food Irradiation processes; the techniques used with this method; discuss how this method affects shelf life, nutritional value and sensory value, and compare the benefits and limitations of non-thermal food processes with the benefits and limitations of thermal food processes.

This method is usually carried out on ready to eat food and processed meat and poultry. This method is a proven way to extend shelf life by killing microorganisms and pathogens, which are the reason processed meat such as deli meats last so long. However, there are negative effects of this method. There is a change in nutritional value and sensory value in foods that have been used in this process. It can change the flavour and can cause vitamin and protein destruction. However, non-thermal methods offer an extension in shelf life without changing the sensory values or nutritional values. It is a low cost method of food processing also. Spam is a brand name for a canned meat product containing ham, pork, salt, flavourings, and preservatives that are mixed and cooked under vacuum pressure. The product was made in 1937 and it became popular around WWII where it was recognized by the United States and Russian soldiers. After the war, the product became popular and well known around the world. Over the years consumers wondered about the product, and if it was healthy because of the simple ingredients. This issue made a big difference on the popularly of the product. In today’s society, canned food has become a big issue whether it is healthy or not because of the chemicals and preparation. There are many reasons why Spam is not healthy, and some main reasons are the ingredients, the processed meat, and the amount of chemicals used. There are many bad chemicals in spam to harm a human being.
There are many reasons for wanting to cool things, but whatever the reason, the Second Law of Thermodynamics dictates that cooling something will take effort (sorry, no spontaneously cool sodas). Different techniques have been developed to address this issue, each having its own limitations and ideal uses.

Food has been a common source of necessity in our everyday lives as humans. It helps gives us nutrition and energy to live throughout our life. Over several decades, the development of making foods has evolved. They have changed from natural to processed foods in recent years. Nowadays natural ingredients are barely used in the making of foods like bread, cheese, or yogurt. The food industry today has replaced natural food making with inorganic ingredients. The cause of this switch is due to processed foods being easier, cheaper and faster to make. Artificial nutrition and processed foods have been proven to last longer in market shelves then natural foods. Also, due to artificial additives in processed foods they help satisfy consumers taste more than natural ingredients. The method of producing processed foods is common in today's food industry and helps make money faster and efficiently for companies. Examples of this can be found in all markets that distribute food. Even though processed foods may be easier and faster to make, they are nowhere near as healthy for consumers compared to natural foods. Natural foods are healthier, wholesome, and beneficial to the human body and planet then processed foods.
In order to understand why food irradiation is necessary, the definition must first be outlined and understood. “Food irradiation (the application of ionizing radiation to food) is a technology that improves the safety and extends the shelf life of foods by reducing or eliminating microorganisms and insects” (“Food irradiation is”, 2016). Eliminating microorganisms and insects is accomplished in a few ways. There are three energy sources for food irradiation. First is the use of the elements cobalt or cesium. These elements have radioactive properties that allow gamma rays to be emitted into food. The radiation from these elements ionize and prevents microorganisms from multiplying. X-rays are also

Lipids are a major source of energy and provide essential lipid nutrients. In many food products the lipid component plays a major role in determining the overall characteristics, such, as flavour, texture, mouthfeel and appearance (Ross & Smith, 2006). However, fats, oils and lipid-based products deteriorate during heat processing, distribution and long term storage. The chemical deterioration is as a result of lipid oxidation. In some chesses, a limited amount of lipid oxidation is desirable for the generation of a characteristic taste or smell (Sun et al., 2011). On the other hand it is undesirable in high lipid or fat containing food products. Lipid oxidation is a major concern to the food industry due to the increasing emphasis on the use of polyunsaturated vegetable and fish oils, and discontinuing the use of synthetic antioxidants. Unsaturated fats are used extensively in the formulation of many food products and these are the most susceptible to oxidation. Lipid oxidation can lead to several changes to food products which affects shelf-life and consumer acceptance. These include development of rancid flavours and aromas, changes in colour and texture, and a decline in the nutritional value of food products (Hidalgo & Zamora, 2000; Morales & Jaménez-pérez, 2001). Lipid oxidation products decompose lipid soluble vitamins such as vitamin A, D, E and K, and its pro-vitamins carotenes resulting in nutritional losses in food products (Rahman, 2007). In addition, the oxidation of fats in foods can lead to the accumulation of toxic compounds such as peroxides and aldehydes.
