The restaurant world is changing every day. It breathes and grows just like we do and this year Seattle has taken up some new trends. Around the United States and the world people are switching to a new way or eating, a healthier way of eating. New organic ingredients are changing the way the restaurant world works and new diets like gluten free and vegan are changing the way people eat out. Seattle is quickly moving into the forefront of this change, with new trends popping up all over the city.
Throughout the last year Seattle has been moving more and more toward a new type of eating. Culinary trends for 2014 are changing to bring out a newer healthier side of not only eating out but cooking at home as well. Organic food has played a large part in this. Yes organic food and farming has been around for several years but more recently it has become more popular to the general public. People want to stay away from GMO’s and pesticides in their friend produce. By buying organic it gives people the piece of mind to know exactly what they are eating. Many restaurants are now advertising the fact that they only use organic fruits and vegetables in their dishes by putting it on their menu or posting it on the web. Restaurants like Portage Bay in the University District pride themselves with their use of only organic ingredients, one of the things that makes them so popular and really helped to put them on the map.
Another new culinary trend on Seattle for 2014 is locally grown produce. The restaurant world grown more and more into locally sourced ingredients and knowing exactly where their products come from. There are many new culinary trends growing and popping up around the United States. Seattle is one of the first, pushing toward a healthier way of eating with new trends this year. With locally sourced meat, seafood, and produce, some even grown in the restaurant, people are pushing more natural ingredients onto the menu and people’s plates. With a new focus on nutrition new menus and restaurants are becoming more popular and consumers are getting hooked on clean eating. Around the city you can see menus changing and restaurants popping up to benefit people with special dietary needs, like those on a vegan diet. These are all new trends and ideas that are growing in Seattle and around the country.
Steven Shapin is an expert when it comes to telling people the reality of the situation. In his, article “What Are You Buying When You Buy Organic?” Shapin exposes and explains the truth behind the word organic. He explains that our view on organic is not a reality. The small farms that we picture in our heads are really just big business in disguise and these big businesses are trying to do good by supposedly not using harmful pesticides. Which are supposed to not damage the environment but in reality they are probably not making any sort of difference. Some people care about the environment, while others are buying taste when it comes to organic food but using different pesticides are going to help the taste, only freshness tastes the best.
Whether it’s from a food truck or an underwater restaurant, it’s not hard to find a good bite to eat. The Bay Area is always in high demand of new restaurants. In Washington Posts “Why San Francisco Is One of the Best Cities in America to Eat in 2015” author Tom Sietsema reported, “The backbone of his city’s vibrant culinary scene is its audience. San Franciscans, in general, are highly aware and supportive of not only our local restaurants, but also our local farmers, artisans, and growing areas It makes for a dining scene in which people are fully immersed in our food culture” (15). The food culture is a huge advantage for the Bay Area residents. On the other hand, many illustrious family-owned restaurants have been packing up and leaving due to high demand in their real estate. KQED news reporter, Sam Harnett, wrote in “Mission District Restaurant Landlords”: “If you’re a small business owner in a hot neighborhood, there’s not much to stop a landlord from jacking up your rent once the lease is up”. This illustrates the hardships of family-owned restaurants being unable to afford their rent and forced to leave. Bay Area residents are quick to contribute to the food revolution, regardless of price. Many residents try to keep the money circulating within The City by purchasing from local farmers and family-owned shops. I cannot deny that I have not taken advantage of the Bay Area’s amazing food

A lot of people go to supermarkets in order to buy some organic foods, because they think that organic foods are healthier than conventional foods. People purchase organic foods for different reasons such as personal health, the quality of organic foods, and taste, but the most important reason is personal health. The topic that whether organic foods have more benefits or not is very controversial for a long time. Maybe some people believe that organic foods are beneficial to human health, but some other people disagree with the viewpoint, so buying organic foods depend on people’s choices.
