The 24-hour food diary that I kept was for Tuesday, September 27, 2016. This was a day that I did not work. For breakfast at 7:49 AM, at home, I had dark roast coffee (12 fl oz.), with half and half (1tbsp) and no calorie sweetener (1 packet) as well as with oatmeal (½ cup dry), which I made with water (1 cup). Once ready, I added brown sugar (1tsp) and raisins (¼ cup) to my oatmeal. This is my usual breakfast, whether I have work or not. I like to eat oatmeal in the morning because it is simple to prepare, it fills me up and keeps me feeling full throughout the morning. It was also a very hot day and a smoothie sounded delicious. Around 2:30 PM, at home, I decided to make a salad, which was split three ways between my mother, my sister and myself. It consisted of spinach (3 cups), shredded chicken (1 ½ cups), dried cranberries (¼ cup), walnut pieces (¼ cup), fat-free feta cheese (1.5 oz) and lite raspberry vinaigrette (6 tbsp). My mother and I like to prepare this meal pretty regularly because it is easy to make. It is also one of the healthier meals that my family likes and eats. At 8:15 PM, at home, I had caramel praline crunch frozen yogurt (½ cup ). I have a big sweet tooth so later in the evenings I like to have some frozen yogurt or ice cream while I watch a program on the television.
My eating habits did not originate in early childhood. My parents never enforced strict rules about eating a certain amount of meat or vegetables for every meal. For the most part, I was allowed to eat whatever I wanted, when I wanted. During my childhood, when my parents would make dinner at home, they would usually make a meal that consisted of meat with a vegetable or two; something that some would consider well-balanced. However, I would not always eat what they made. I was what most people would call "a picky eater." So, instead of forcing me to eat certain foods, my parents would accommodate me and, in addition to making their food, would prepare craft macaroni and cheese for me almost daily. When we think of our national health we wonder why Americans end up obese, heart disease filled, and diabetic. Michael Pollan’s “ Escape from the Western Diet” suggest that everything we eat has been processed some food to the point where most of could not tell what went into what we ate. Pollan thinks that if America thought more about our “Western diets” of constantly modified foods and begin to shift away from it to a more home grown of mostly plant based diet it could create a more pleasing eating culture. He calls for us to “Eat food, Not too much, Mostly plants.” However, Mary Maxfield’s “Food as Thought: Resisting the Moralization of Eating”, argues differently she has the point of view that people simply eat in the wrong amounts. She recommends for others to “Trust yourself. Trust your body. Meet your needs.” The skewed perception of eating will cause you all kinds of health issues, while not eating at all and going skinny will mean that you will remain healthy rather than be anorexic. Then, as Maxfield points out, “We hear go out and Cram your face with Twinkies!”(Maxfield 446) when all that was said was eating as much as you need.
Growing up, like any normal child, I had to follow certain rules set by my parents. Both of my parents are very resourceful and economical, and as a result, food is never wasted in our household. From a young age, my sister and I have been taught to take onto our plates only what we can finish; if we fail to do so, we are scolded without fail with one variation or another of the “think about the poor children in Africa who have nowhere near as much food as you do” lecture. The cookbook has a wide variety of recipes to construct for breakfast, lunch, and dinner. It is helpful for both food preparers that are unsure what to make and for those that know what they want. Even when making a recipe from a different cookbook, the Betty Crocker cookbook’s yield and equivalent list can be valuable when deciding if there is enough of an ingredient. Proper nutrition is important in maintaining a long and healthy life. Most Americans are rushed due to their busy work schedules, and do not take the time to plan their diets properly. Like me, most Americans are unaware of the importance of eating a healthy diet and consume too many foods without the proper nutrients. Throughout my life I have been fortunate. I have not had any major health problems, and have been able to consume most foods without having to worry about gaining weight. These last two years, however, I started to gain weight and have become concerned with my diet. Changing my poor eating habits has been difficult for me, however, having this assignment has taught me that it is not as difficult as I previously imagined.
Knowing this, it 's important to enjoy a hearty and healthy meal. Technically, breakfast should be the heaviest meal that you eat for the day. If you love going through the drive-thru to order a fruit and yogurt parfait, try overnight oats instead. Overnight oats have a surprisingly similar taste and consistency to a parfait. Instead of using yogurt as the base, add a half cup of almond milk and an another half cup of oats. Throw in a few strawberries, a little bit of honey to taste, and any other nut toppings (pecan meal, walnuts, flax seeds) for more fiber. The food tracker benefited me in so many ways. I total three days out and all calculated 4800 calories. The food tracker allowed me only 2000 calories a day and wanted me to target at least 150 min/week in physical activity. The recommendations for my calories were very direct and limited to only a certain amount that I could manage. It help me manage my daily food intake, inform me of the calories and fats I was placing into my body, and educated me on the need foods needed from the food pyramid. My son even loved placing the items we ate into the system to look at “our numbers” (he it calls that).
Parents play an important role in forming their child’s early eating habits. When your child receives an A+ on his/her math test, what do you reward your child with? An ice cream cone or an apple? Usually parents reward their child with an ice cream cone. But if your child constantly does good do you constantly reward them with ice cream cone? No, parents should not reward their children with sugary snacks because it will soon become a norm for the child. So when they have done something good they feel as if they need the ice cream cone or other sugary snacks. If you want to reward your kids for achieving their goals take them to the park, give them a fruit bowl, or even a hug. Parents are also responsible for what goes in their child stomach during dinner time, so break out your pots and pans moms and dads, because from this day forward we are cooking homemade meals. Home cook meals will allow you to have “complete control over the type and quality of ingredients in your meals” (Roizman). As well as allowing them to take out the extra salt, sugar or fats that are seen in fast food restaurants. Tracey Roizman also states that “preparing most of your meals at home helps train your palate toward healthier fare” in her article known as The Advantages of a Home Cooked Meal. Growing up, I struggled with being overweight, even though I was active. As a young boy growing up on a farm somewhere in Northwest Missouri, I worked very hard doing chores the normal urbanized American would not do. My father would have me do chores every day, yet I was still overweight. Reflecting back to what what could have made me that way; many ideas began to appear in my head, so my research on nutrition began. There were many things that were argued to cause childhood obesity, however the most logical and sensible outcome that came from my research was that environmental, political, cultural, and other such factors were not to blame for my obese childhood, but nutrition was. This statement correlated with my very active childhood. My Father assigned me to do many difficult and strenuous tasks so you could say I worked up an appetite. However, this factor combined with my Mother’s inability to cook a small meal, you can imagine the amount of food I consumed on a daily basis. Not to mention the sheer fact of how much I consumed because the food tasted amazing. Mom would always say: “You have bigger eyes then your stomach”, meaning I would get more then what I needed or what I was able to eat without being uncomfortable. I would get helpings upon helpings of food, and since we did not have the money for the food to be wasted, I was forced to finish my plate. I would get in trouble if I wasted food, which is a big thing for our family.
One of the reason’s why I felt my nutrition needed to changes is because nutrition is a huge part of a healthy lifestyle, the way that we eat and what foods we consume can have a huge impact on our everyday lives. Nutrition plays a huge role in multiple facets of a person’s life energy, health, skin, weight, confidence, and more making having a good control on your eating habits extremely important. How we eat over the years and what foods we routinely choose to eat can eventually have a lasting effect on use and what we consider to be most appealing and appetizing at any given moment. Having these craving and routine habits makes eating, diet, and nutrition both a behavior and a lifestyle choice that can be changed over time with help from the theories learned in this class.
The benefits of good nutrition are important for everyone at home and at work. Good health begins with a good breakfast. People who have a morning meal are more likely to take in more vitamins and minerals, and much less fat and cholesterol. (WebMD, 2008) The effect is often a leaner body and less chance of overeating and going to the vending machine during work hours. Researchers at the 2003 American Heart Association conference reported that breakfast eaters have a lower chance of being obese and getting diabetes. Another study in the International Journal of Food Science and Nutrition concluded that people that eat breakfast cereal daily feel better both physically and mentally compared to the people who almost never ate cereal for breakfast. A Web MD article explains “To get the full benefits of breakfast, the Mayo Clinic recommends a meal with carbohydrates, protein, and a small amount of fat. They say that because no single food gives you all of the nutrients you need, eating a variety of foods is essential to good health.” Even if an employee does not have time to eat before work, because they are rushing to be on time or their morning consists of dealing with children, bringing a breakfast that they can eat as soon as they get to work would be a healthy habit to get into. Multi- tasking is possible when eating cereal, fruit and nuts at the same time as checking voicemail or emails. Good nutrition needs to continue throughout the day. Fruits and vegetables, healthy snacks, drinking water or tea to stay hydrated, and eating dairy products all add to well-balanced meals. For example, eating healthy dinners with fish two times a week can vastly improve a person’s well-being because fish has omega 3 fatty acids.

My favorite meal is the chicken fettuccini pasta. I chose this dish because I can never stop eating it. The meal is made up of warm tenderized chunks of chicken, delicate smooth creamy white sauce, and many varieties of sliced up vegetables. However, when I was a child vegetables has always been difficult to eat. It prevented me from enjoying my favorite meal because I would always have to take out the mixed vegetables in the meal. As a child I 've tried avoiding vegetables, but was found throughout the school cafeteria 's food, my mother 's cooking, or many fancy restaurants. There was nowhere to run. Over the years, my mother knew I was struggling to eat vegetables. She worked very hard by coming up with her own recipes in order for me to eat healthy. From mixing in the vegetables into the meals I usually eat or to trick me into eating meat but was actually vegetables. Soon later I came to realize how much effort she has put into the meals. All those hour and hard work my mother put it allowed me to enjoy my favorite meal again.
While I was tracking my eating for these three days, I began to learn about the benefits of the food that I am eating and the nourishment that they provide for my body. I had never realized how big of a role that the food that I eat plays in my everyday life. Eating has never been something that I really think about it is just something that I do. After I looking at the data of what I eat on Choose My Plate, I realized that my eating habits are far from balanced and that I needed to work on bringing my eating habits to a better balance. While there are a lot of things that I have been doing right, there are also many things that I can work on.
