Hawaii’s fruit cake or popularly known as “happy cake” is Hawaii's most famous and delicious cake which was originally made of pineapple, roasted macadamia nuts and fresh coconut. It was founded by Dick Rodby in 1967 and first served at the legendary restaurant at Kemo’o Farm in Wahiawa. As the days passed, Hawaiian cake became popular all over the country and orders have been their regular guest, until later throughout United States people begun to order this delightful fruit cake from Kemo’o Farm which adds to its popularity that led to the business’ success (happycake, 2012).
In addition, few years later Dick Rodby sold the company to Owen O’Callaghan which the latter join the organization that make the business developed and amend in a new direction with a new name which is “Happy Cake”. In the later years, Hawaii’s fruit cake’s style and ingredients was repeatedly innovated by a lot of bakers of Hawaii, as well as to the other countries that result to the different styles and additional ingredients the Hawaiian cake now offer. Hawaiian cakes have been used as wedding cakes in Hawaii and it has been developed into a lot of flavors (Hill, 2011).

Thinking back through history, the overthrow of the Hawaiian Kingdom was a monumental, sadening take over. The Committee of Safety or the Annexationist were at a verbal war with power of the Hawaiian Islands. Hawaii has been in the threat of annexation for a while and while some support the monarchy others despise it. For the Reciprocity Treaty to the Bayonet Constitution to the Spanish American War, all of these events lead up to the overthrow of the Hawaiian Kingdom mostly unfairly and illegally. The overthrow of the Hawaiian Kingdom was unjustified because of the unfairness and illegalness from the opponents such as, John Stevens and the secrecy from the Committee of Safety.

Otherwise, your stomach would be growling until your next one after this! The Hawaiians have developed a unique diet of fish, shellfish, and edible plants. These foods include taro root, sugar cane, sweet potatoes, yams, a fish called mahimahi, and much more. The abundance of edible plants you can find in Hawaiian originally brought by the first Polynesian voyagers and settlers to arrive at Hawaii in ancient times. Later immigrants from Japan, Portugal, China, and The Philippines arrived in Hawaii during the 1800’s as laborers for the sugar plantations, and they brought food from their homeland too. This impacted the Hawaiians’ own cuisine because they started to add parts of the immigrants’ foods to their own like they did with hula. Soon, popular modern dishes were created, like malasadas, saimin, and spam. Malasadas are doughnuts covered in sugar that was inspired by Portuguese sweetbread. Saimin is noodles in a broth mixed with meat, vegetables, and seasoning, created when the Hawaiians were introduced to Asian forms of noodles. Finally, spam is canned meat that has grown very popular with the locals, particularly as spam musubi, a slice of the meat on a block of rice wrapped in seaweed called nori.

It was my mother’s birthday, I forgot which birthday it was. Two weeks before that day, I was thinking about what should I do for her birthday. I thought about getting her a present and a card, but it seemed to me too dull. I wonder what can I do to let her remember that birthday for the rest of her life, although I cannot remember which birthday it was. I thought of one thing that I always wanted to change about birthday — the cake. I was young and I believed that the cake was really important for birthdays. Previously, the cakes were standard, they taste and look average, they were either chocolate or vanilla flavored with standard bakery decorations on the them, on top, they were always slapped on a white chocolate “Happy Birthday” sign. There I go, I can bake a cake for her from scratch, a unique one which she will never forget about.
