So what are you waiting for? Let’s get the show on the road. Transition: Where do we even begin? Let's start with the foundation. Body I. Building a foundation has major musts! A. Quality of the baked cake must be perfect such as cake texture. 1. For example, if the cake is baked at the wrong temperatures/ times, the cake may come out to be either undercooked, meaning it is too soft and won't hold together. 2. Overcooking the cake just might make it unappetizing to even eat. 3. Make sure to bake at right temperatures! B. The cake must be layered and shaped to size. 1. Layers must be even around perimeter and top 2. Cake must be cooled completely before crumb coating C. Crumb coating can make a big difference with the final look of the cake 1. It gives an overall effect from “neat” to “WOW” a) What is it crumb coating by the way? problems. b) Crumb Coating is basically the sealing of crumbs on the cake with a base coat. You can call it dirty icing because it traps all the mess in the first coat. 2. Overall expression with Crumb coating looks more professional. II. Tracing and drawing cookie monsters’ face on the cake A. start off with a clean printed copy of his face 1. Measure the diameter of the cake a) Print cookie monsters face to fit the cake b) Trim the paper and plastic wrap it 2. Place picture next to the cake and do your best to replicate the image onto the cake B. With a bakers carving knife, trace the image of his features on the top base of the cake frosting 1. On the top of the cake, trace two large circles for the placement of the eyes 2. Towards the middle and down, trace the shape of his mouth according with the picture 3. Place cake in freezer to chill and move on to the next step. III. Decorate the face of the cake with icing A. Prepare blue icing with vanilla buttercream whip and blue food coloring 1. With all ingredients, whip in a mixer machine till perfection is noticeable 2. Input frosting into a piping bag with grass like icing tip ready to go. a) Set aside piping bag to chill in freezer along with crumb coated cake, then next step is to ‘make’ the features. B. Prepare eyes and mouth with white and black fondant icing 1.
With a Parisian Scoop, scoop out two white balls from the fondant icing container for the eyes, pull out two smaller balls from the black fondant icing container and one bigger piece for the mouth. Smooth out all balls with a fondant rolling pin, and then trim the white ones to shape and fit the eyes (based on what you did on the cake previously), the smaller black ones for the pupils, and the bigger one for the mouth. With that plastic wrapped copy we made earlier of the characters’ face, place the bigger rolled out black fondant onto copy and trim to fit the mouth of the copy. Place all features onto cake accordingly, then grab the piping bag and start the
process! C. Now it’s time to decorate the cake with blue icing! 1. Apply fury-like details onto the cake starting in between the eyes then around till the whole face is completed 2. Apply frosting around the perimeter of the cake then smooth out completely with icing spatula till nice, clean/smooth blue layer of icing is around the cake, hiding the crumb coated layer. 3. With an icing comb, designed to create textures of ridges, waves or swirls, run your desired style onto the perimeter of cake. 4. With the garnish of your choice, it can be either coconut shavings (like the one I used above) chocolate chips or even cookie crumbs, place it at the bottom edge of the cake. 5. And finally, add a whole piece of chocolate cookie in his mouth with some extra pieces/crumbs falling down the chin of his face and however much can please you to give a good definition to why he is called cookie monster! Conclusion I. Today we learned how to make the best looking cookie monster cake! II. Although it may have sounded like a lot of work or a very difficult task, it is not until you get up, attempt to actually make one and succeed. As long as the three major steps required which is building the perfect structure for the cake, improvising on the features of the icing and embellishing the looks are there, there is very minimal faults that can be made.
