Every organisation runs by a self-constructed structure that makes their organisation unique and appealing to the customers. The structure that organisations build have three common characteristics; Distinct Purpose, People and Deliberate structure.
When an organisation has a distinct purpose, they have goals that work towards the direction of their organisation’s purpose to stay in business. In Punjab Grill (PG), we can see that the organisation’s distinct purpose is to offer their customers an array of innovative, top-quality and delicious North Indian style cuisine. PG has very specific employees in mind when hiring. They require talented chefs with specialised skills who have perfected the making of tandoor. They also require bilingual and cuisine -conversant staff in order to provide customers with an immersive experience in North Indian culture and cuisine. Other people in PG who also play an important part are Mr Singh and Mr Tan, who manage the administrative side, and the housekeeping employees who keep PG clean.
When the goals and people are set, an organisation needs a structure to run by. There are two types of structures, the traditional or open and flexible. Mr Singh has done this by ensuring that the chefs he hires already have specialised skill sets at making tandoor. This helps him cut down costs on having to train chefs without this skill set. He also shows effectiveness by making a decision of not removing the tandoor pomfret from the menu. If he removes this dish, less preparation would be needed, allowing Mr Singh to hire lesser chefs and ultimately solve his manpower shortage problem. However, he has made the effort not to remove the dish in order to fulfil the company’s distinct purpose and goals.
As the name suggests, fine-dining restaurants places a lot of importance in the food that they serve. As mentioned before, PG’s distinct purpose also indicates how consequential it is to serve high-quality North Indian cuisine. Therefore, in this case effectiveness is important. If Mr Singh wanted to be efficient, he would have removed the tandoor pomfret, however it would have led PG astray from their distinct purpose, causing customers to feel that PG has lost the element that made them unique and
