Today’s movie gave an overview of nutrition and it’s importance for disease prevention and health. The movie began with the quote “nutrition is not adequately taught in medical schools today”; therefore, both patients and physicians need to inform themselves about good nutrition. Since I am attending medical school next year this caught my attention that I will both be a physician and a patient; therefore learning as much as I can in this nutrition is essential to not only my health during the stress of medical school but also for my future patients. First of all I did not know it was “old school” to refer to carbs as simple and complex. Rather it is more accurate to look at a Glycemic index. This is a tool that measures the amount of sugar in your blood after ingestion. Even more accurate measures are the Glycemic load, which takes into account glycemic index and the percentage of carbohydrates in the food. A general rule of thumb is the more processed the food the higher glycemic index. In addition, olive oil extra virgin is the best oil to cook with because it has phytochemicals specifically polyphenols, which reduce your chance of cancer, heart disease, hypertension and other chronic conditions.. It is also full of monounsaturated fats. Besides recommending olive oil, I also enjoyed the idea of going on a “low inflammatory” diet and will compare his recommendations to my current Fitdata nutritional recordings. Finally, teaching patients to stick to the outsides of the grocery store is important because this simple task can easily increase the nutritional value of the foods you eat. The fresh foods tend to be located on the outside of the store while the more processed foods (high glycemic index, high in polyunsaturated fats, low in phytochemicals) are located in the isles. Nutritionism and Today’s Diet Nutritionism is the ideology that the nutritional value of a food is the sum of all its individual nutrients, vitamins, and other components. In the book, “In Defense of Food” by Michael Pollan, he critiques scientists and government recommendations about their nutritional advice. Pollan presents a strong case pointing out the many flaws and problems that have risen over the years of following scientific studies and government related warnings on the proper amount of nutrients needed for a healthy diet. Pollan’s main point is introducing science into our food system has had more of a negative impact than a positive one, we should go back to eating more of a traditional diet. Proper nutrition is important in maintaining a long and healthy life. Most Americans are rushed due to their busy work schedules, and do not take the time to plan their diets properly. Like me, most Americans are unaware of the importance of eating a healthy diet and consume too many foods without the proper nutrients. Throughout my life I have been fortunate. I have not had any major health problems, and have been able to consume most foods without having to worry about gaining weight. These last two years, however, I started to gain weight and have become concerned with my diet. Changing my poor eating habits has been difficult for me, however, having this assignment has taught me that it is not as difficult as I previously imagined.

Nutritionism is an ideology that believes that the nutrients in foods are the key to understanding them. Nutritionism believers are so focused on the nutrients that food contains that they forget about all other aspects of food. The problem is that consumers rely on packaging to tell them what nutrients a food provides, since nutrients cannot be obviously seen, and they rely on science to tell us what nutrients are good and which are “evil”.
Since 1916, the United States Department of Agriculture (the government agency responsible for all U.S. policy regarding agriculture, food, and farming) has revised their recommendations several times. Unfortunately, money talks and the USDA’s recommendations are based on outdated science and are influenced by people with business interest. Even so, its recommendations are considered almost “holy” by physicians, nutritionists, and dieters, but in reality, they are the root cause of the problem. A single visit to our local public school cafeteria and it will become clear that they do not have the best interests of the children at heart. What they are feeding our innocent children is preposterous. Doctors, the people we trust and expect to be “the experts”, do not know much about the subject of nutrition. What is the heathiest diet and why? In the film one was able to see many eye-opening experiences. Also many experiment were held in order to fine the best diet. At the end many people were excited of the results so positive. They were able to change one simple thing in their diet and their body had change completely. Resulting that eating a plant based diet is healthier and can eliminate all diseases, one might have in the body.

America is a capitalist society. It should come to a surprise when we live like this daily. We work for profit. We’ll buy either for pleasure or to sell later for profit. It should come to no surprise that our food is made the same way because we are what we eat. We are capitalist that eat a capitalist meal. So we must question our politics. Is our government system to blame for accepting and encouraging monopolies?
The experiences I had since my childhood shaped my interest in helping others create nourishing relationships between food and families. She herself is a dietitian and she is my greatest inspiration for my chosen path. My interests in nutrition stemmed from a life-changing event. When my grandmother passed away due to complications of Type II Diabetes, I realized a strong correlation existing between diet, lifestyle, and disease. Coming from the Philippines, I was familiar with the challenges low-income families face such as food security and malnutrition.
My undergraduate degree in Human Biology, emphasis in Nutritional Sciences, has given me a foundation of knowledge that could be expanded upon through the Clinical Dietetics master degree and supervised practice program at Grand Valley State University. The ASCEND accredited DPD program at the University of Wisconsin Green Bay fully prepares students, myself included, for a career in the Nutrition field. My professors facilitated learning while meeting the requirements of the certification with a rigorous cutting-edge curriculum. My degree focused on the Human body as a whole, while honing in on nutritional processes, advancements in nutrition research, and the various issues that future nutritional professionals may face. It was a well rounded program that encompassed all facets of the nutrition field with coursework in: community nutrition, food science, quantity food preparation, nutritional biochemistry, life cycle nutrition, and advanced nutrition and metabolism as one of the only undergraduate programs in the nation to teach upper-level concepts in nutrigenomics.
Since industrialization in early America, the food industry has been growing, and with the development of prepackaged foods and fast-food chains, having snacks at your fingertips is a luxury that seems convenient and beneficial… until one considers the effects of junk food on the body and brain. Generally, junk food is characterized as food with high fat and sugar content and minimal nutritional value (Karimi-Shahanjarini et al., 2012). In modern day America, it is common to arrive home from a long day at school or work and grab a conveniently prepackaged snack to quiet your munchies and calm your nerves. Although this seems like a harmless act, eating these snack foods can have negative effects on the body and brain.

This quote by Ann Wigmore addresses the issue regarding citizen’s health in the United States. Too many people are losing their lives due to health illnesses such as heart disease and cancer. It seems that we have control over what we eat, however many of these illnesses come from eating things we wouldn’t think twice killed us. That is why it is important to think about the purpose for eating. The purpose for eating is to nourish our bodies so that we can take care of it from the inside out. Along with our sensory skills, eating can be a wonderful experience. Think about your favorite food and its appealing colors. How even the scent of it
