The Love For Tamales You 're at school, in class, not being able to focus the entire time because you can’t get your mind off the tamales your mother had promised to have ready by the time you go out. Just thinking about them makes your mouth water, and you cant wait to take the first bite to satisfy your craving. Although a lot of people know how to make tamales, no one will ever compare to the tamales my mom makes for me and my family. As soon as you take a bite out of them you feel delighted, and will make you feel the need to keep eating them without keeping track of how many you ate. I’m sure after having a taste of them you will not want to have any other tamales other than my moms’s. To begin with the process of making the tamales, we need to buy the ingredients and the utensils you will need to make them. First, you will need to buy the dough for the tamales, not just any dough though; this one is special. Remember the steamer I mentioned at the beginning, well now is the time were you will have to use it. Fill up the cooking pot with water about one fourth the pot and place the steamer rack inside. The steamer rack will be were you place the tamales when its time to set them in the pan. By this time you should place a a rock inside the center of the rack to add the support of the tamales and will help them stay up. Make sure the folded part of the tamale is held down that way the stuffing won’t come out when its cooking. Organize all the tamales around the rock leaning towards it and continue to build your self up until you have finished pilling the tamales. Place a moist small towel over the tamales and a plastic bag to seal the pot then cover it and put it on the stove. Let the pot sit there for about 2 hours with a medium fire
