The good thing about pupusas is that they are diverse; what I mean by that is there is vegan, vegetarian, and carnivorous options. 1. If you want a vegan option, you can make a refried beans filling, which is literally just smashed refried beans. You can buy the beans or make that at home. 2. If you want a vegetarian option, you can make a mozzarella cheese. This technically is not “authentic”, but it tastes great. There is also pickled loroco, which is a vine with edible flower, with mozzarella cheese. [Transition: This is all you will need for the preparation for your pupusas. Now comes the, somewhat, tricky part of making pupusas. ] III. I want to demonstrate how to form a perfectly round and thick pupusas. I am going to be showing you a simple step-by-step process that does not make forming them so intimidating. A. What you are going to do first is put corn oil on your palms, so that the dough will not stick to your hands. B. Take a pinch from the dough and form a ball between your palms. It should fit in the dent you have in your hands. C. Form a small hole in the middle of the ball and place the filling you chose inside. Then, you close the ball back up
