Cake symbolizes joy, love, appreciation, and even accomplishments. It is served during weddings, birthdays, and many different party settings. The cakes are almost always made to honor or mean something to the recipient. They are edible art, to be viewed and consumed with love and happiness on the most joyous occasions. Most cakes for these types of special occasions are ordered in a cake bakery. This process can seem daunting to someone that is looking for the prefect cake. Whether it is a simple birthday cake, or a grand six-tiered wedding cake, it is a always a good idea to turn this over to a professional. From start to finish, this cake will have gone through several steps and stages before it is on a table and ready to be served. The first step towards getting a cake is to place an order with a cake bakery. The baker will go over the size of the desired cake, the price per slice, as well as the art and decorating charge specific to the cake that is being ordered. Normally during this time, pictures of previously done cakes are shown and ideas are discussed to allow the baker to have a full understanding of what is wanted from the customer. The decorator will then begin the completion of the cake by icing the thawed, baked cake with a scratch coat to keep the crumbs from falling with the desired icing flavor, then a full coat of icing. The icing is smoothed out with a trowel and the layers of the cake are stacking it if needed using cake dowels to hold them in place, if the cake is small enough to transport while stacked. If fondant is to be used on the cake, it is then colored to the specified tone and rolled out and laid on the cake, pressed to cover the entirety of the cake, molded and smoothed. Depending on the cake, the decorator may airbrush the fondant covered cake before putting the finish touches
