“Forks Over Knives” & How its Bias

The documentary I was presented with was Forks over Knives. Its general premise is saying meat is bad, it causes cancer, and that all humans should be on a whole- food plant based diet. They took these people into a 12-week program to switch them over to this diet. My knowledge before watching this film was that meat is good for you, we get plenty of amino acids that we don’t make in our own body. It gives us lots of protein. I did know that red meat is not a good meat to eat all the time. But I never would have thought of cutting meat out of my diet. Lee Fulkerson was the director as well the writer of Forks Over Knives. The emotional feel or atmosphere created by the documentary was just trying to help. You could tell that they want to help people and make sure they are all healthy and can live the right lifestyle. While watching this film I encountered many things I found questionable. I found three claims to be bias/ controversial in this documentary: it uses correlation as causation, they claim someone having health issues can be solved by cutting meat out of their diet, and lastly they only use one study to prove their method, and it is the one that one of the main people in the movie made.
The documentary uses correlation as causation which isn’t true. It stated many times throughout the film that there is a correlation with protein consumption and tumor growth. They use many examples like that within this film. Forks Over Knives (2011), “During the same time the way American ate was changing, again, the number of fast food franchises was exploding as more and more over scheduled Americans began using them as a convenient way to feed themselves and their families. The people they used for the big stories in this film had some sort of health issues already. They picked from ones that had high risks for heart disease or type two diabetes. They didn’t use people who aren’t at a high risk and don’t need to switch their diet. They failed at showing a direct link between how someone’s health is increased from eliminating meat. It only used people whose diets were full of junk food, not just meat. HB (1991), “Canadians are becoming increasingly aware of the importance of nutrition in their long-term health prospects. With this increased awareness, however, has come an abundance of misconceptions including the notion that meat is "bad" for you. In their haste to avoid saturated fat, physicians and the public alike have lost sight of the fact that lean meat in reasonable serving sizes poses no threat to health and is an extremely important source of many nutrients.” We heard plenty of stories of people who were on the verge of getting a heart disease, or had even had a heart attack or two. No one they used was on a normal diet who ate meat. Forks Over Knives (2011), “On my way over I drank these two red bulls, I also had a twelve-ounce coke and another half of a twelve-ounce coke. If this is at all indicative of any other films within this genre, than it highlights a troubling pattern within modern nutritional documentaries. The money spent on this films post production would be better used on doing actual research to back up the claims made. While the traditional Americans diet is definitely hungry for change, it is also starving for science.
I will first show the lack of validity and soundness to Howard’s claim that A) a vegan lifestyle is a healthier choice and B) his claim that one must switch to that lifestyle to enjoy these said benefits. To the claim made in A, Howard uses his own health problems he endured on his meat diet, and uses it as a constant variable comparing it to his now relative healthy lifestyle as a vegan. On first glance anyone who eats a calorie-laden, unbalanced diet and ends up weighing 300 pounds, as Lyman himself admitted, will have health problems regardless of his orientation to meat or vegetables. With this said his comparing analogy is inertly flawed and must be disregarded from the argument he presents. On march 8 before the Dietary Guidelines Advisory Committee, Mary K Young, MS.,R.D,NCBA Director of Nutrition Research and Information, presented the benefits of eating meat. Using Data from the 1995 USDA Continuing Survey of Food Intakes by Individuals (CSI) she confirms that red meat enhances one overall diet quality. Young goes on to point out that red meat is the number one source for protein, B12, and zinc, number 2 source for B6 and third greatest source for iron, niacin and potassium. The population of the earth is now 7 billion and rising. Demand for meat products is rising day by day and companies need to meet the consumer demand and to do so they forget morals about factory farming for animals. However some people over the world people are turning into vegetarians, some do it to improve their health and some do it for religion. After reading the article “Animal, Vegetable, Miserable” by Professer Gary Steiner, I came to agree with many of his well stated arguments against meat eating like: cruelty to animals, animals being given hormones and antibiotics or animals not living a good quality life. In his essay he constantly repeats about thanksgiving and the turkey which didn’t live its life to the fullest.
Obesity is very common in America, around 66% of American adults are overweight and nearly 33% are obese, which leads to heart disease, cancer, stroke and many other illness. Throughout “Shattering the Meat Myth”, Freston attempts to convince her audience that eating animal protein is detrimental to the health of humans. While most vegetarian diets (if followed with precision) are very healthy, practicing a diet that involves meat is not necessarily as deteriorating as she implies. Freston quotes Dr. William C. Roberts, editor of American Journal of Cardiology, pertaining to subject of saturated fats and cholesterol. He states, “When we kill animals to eat them, they end up killing us…” (Freston). This statement however is an example of oversimplification and an appeal to bathos, referencing the power of death. In reality, there are a variety of factors that contribute to the overall health of an individual and consuming animal products, in itself, has not been shown by scientific evidence to cause fatality. In a society that is facing numerous problems, such as economic devastation, one major problem is often disregarded, growing obesity. As the American society keeps growing, so does growth of the fast food industry and the epidemic of obesity. In order to further investigate the main cause of obesity, Morgan Spurlock, the film director and main character, decides to criticize the fast food industry for its connection with obesity in America. In his documentary Spurlock performs a radical experiment that drives him to eat only from McDonald's and order a super-sized meal whenever he is asked. By including visual and textual techniques, rhetorical appeals, and argumentative evidences, Morgan Spurlock was able to help viewers know the risks of fast food and how it has caused America to be the world's “fattest country”.
In “Bad Food? Tax it, and Subsidize Vegetables”, Mark Bittman suggests that the people of America should stop eating unhealthy foods so often. In the article, Bittman tells his audience that people have “heart disease, diabetes and cancer are all in large part caused by the standard American Diet” (page 35). He also states that eating healthy can result to a better health care system saving millions of lives. The big issue is Americans eating unhealthy every day, but proposing a plan to help stop it from happening.

Today’s medical experts say that avoiding meat helps you avoid saturated fat. They have found out from studies that women who eat meat daily have a fifty percent greater risk of developing heart disease than vegetarian women and a sixty-eight percent greater risk in men (staff writer). People may not know about serious diseases meat can cause such as, mad cow disease and foot-and-mouth disease. In the September 1999 issue of the Emerging Infectious Diseases, approximately 76 million food-borne illnesses- resulting in 325,000 hospitalizations and 5,000 deaths occur in the United States each year from improperly cooked or diseased meat (Licher). That is a lot of fun!
Many people don’t believe think anything of what they eat or how it got there. But the harsh truth is the meat that you eat was once a living, breathing creature that had feeling and emotions. Maybe next time you order a steak or chicken nuggets you should think about the animals that went through extreme pain and conditions for you to eat. Not only is it inhumane to put animals through such pain, not eating meat and having a vegetarian lifestyle can have huge benefits to animals, the environment, and your health.
Meat is a coroner stone to the majority of American’s diets. I would venture to say the majority of American’s eat meat for their three meals a day. Eating meat isn’t all bad, it actually brings a good source of protein to one’s diet, in a moderate amount. In 2012 a study was done and found that the U.S. total meat consumption was 52.1 billion pounds. That comes out to be 270.7 pounds per person. We still eat more meat than just about any other country, besides Luxembourg (A Nation of Meat Eaters). Eating red meat is bad for humans because of the negative health effects, the environmental issues it causes, and the inhumane treatment of the animals.
For several years the issue of eating meat has been a great concern to all types of people all over the world. In many different societies controversy has began to arise over the morality of eating meat from animals. A lot of the reasons for not eating meat have to deal with religious affiliations, personal health, animal rights, and concern about the environment. Vegetarians have a greater way of expressing meats negative effects on the human body whereas meat eaters have close to no evidence of meat eating being a positive effect on the human body. Being a vegetarian is more beneficial for human beings because of health reasons, environmental issues, and animal rights.
Every person has the ability to make their own choice of whether to eat meat or not. However, eating meat is directly tied to negative health effects, pollution leading to a depletion of ozone, and the depletion of hundreds of thousands of acres of land “wasted” on animal production when they could be used to solve the hunger crisis or lower emission levels. What humans eat is no longer a matter of choice; it has become a matter of life and death. Literally, the future of the whole planet rests on the decision of whether or not to eat meat. The health benefits of a vegetarian diet are hard to ignore. Vegetarians have a lower chance of developing many diseases, such as cancer and diabetes. Women who eat meat daily are more likely to develop breast cancer. According to an article in the Journal of the National Cancer Institute, “consumption of well-done meats and, thus, exposures to heterocyclic amines (or other compounds) formed during high-temperature cooking may play an important role in the risk of breast cancer.” Men are also more than almost more likely to develop prostate cancer than those who do not include meat in their everyday diets. “Up to 80 percent of prostate cancer is attributed to dietary practices, and international comparisons show strong positive associations with meat consumption” (Alexander, 2010). Vegetarians tend to be healthier than those who consume meat. This is due to the prevalent unnatural chemicals used in the processing of meats, and eating these are unsuitable for the body. Meats already contain harmful amounts of cholesterol, and over-consumption of red meat can lead to early heart disease. Animals that are raised on farms for their meat are not treated well, and this mistreatment can lead to harm in the meat they are producing. Although one life choice cannot change one’s environmental
