There is an episode of Disneyland in California. One of the popular attractions, “It’s a Small World” got an upgrade in 2008. This was because an obesity of Americans. Boats frequently sank because of overweight guests, so they needed to fix it (Marcos). This story clearly illustrates the obesity crisis in America. In today’s world, 65% people in America are obese, and this percentage is the highest number in the world (Overweight). In contrast, Japan’s percentage of obese people is 3.6% (Overweight). In 300 B.C., a culture began to develop around the Japanese with food. Rice agriculture was developed, and it spread all through various parts of Japan. Since then, rice has become one of the main food staples for the Japanese, it has been passed down from generation to generation until now. The formative period of the Japanese food culture was from AD 500 to 1500 (Hosking 2). The influence of Chinese food was strong during this period. Furthermore, from 1500 to 1640, Japanese food saw big changes because there were many different kinds of foreign foods that Europeans introduced, especially, the Portuguese who offered various cakes and deep fried foods such as tempura. From 1640 to about 1860, when Japan deliberately and strictly cut off all contact with the outside world, the maturing of traditional cuisine took place. Then, many new dishes and ingredients were introduced from abroad when Japan was once again open to the world (Hosking 3). As we could see from the background of Japanese food, modern Japanese food is mixed with traditional dishes and foreign dishes from many countries. Since Japan has four distinct seasons, people have chosen seasonal ingredients and prepared many different foods in accordance with the seasons. Moreover, traditional Japanese meals have consisted of small amounts but wide varieties of dishes that have provided various nutrients. For instance, according to the Japanese food book, “At the Japanese Table,” the author introduces famous foods such as Sushi with fish, Oyako Domburi with Chicken, Codfish and vegetable soup with fish, spinach and dried mushrooms, and Japanese noodles (Griffin 53). When we see characteristics of Japanese food culture, we can recognize different patterns from those introduced by Americans. In Japan, unlike America, people often eat food that mothers prepare at home except when they celebrate something. Furthermore, we have the word, Hara hatibu. This means filling a stomach at 80% is optimal. Therefore we often avoid eating too much, which keeps us from overusing our organs (Buettner). Due to this culture, people are more likely to focus on the quality rather than quantity. In other words, very important to Japanese people is how fresh and delicious the food they are eating is. Analysing these two iconic recipes, we can begin to view what kinds of communication is used and by looking at this, the history and the shaping of culture we gain a deeper understanding of the impact and importance of food in both Australia, Japan and around the world. Through this analysis it is hoped that a better understanding of these topics is acquired and an in depth reflection is produced.
Food has been used as a tool by many cultures as movements to help with their culture become recognized, to identify their way of being, and to show their class and status. One out of every three Americans is obese, and the majority of these obese people in the United States have eaten regularly at fast food restaurants. As the obesity rate increases, the number of fast food restaurants goes up as well. Although it is not certain, many believe that obesity in the United States is correlated to eating fast food. Since the United States has the highest obesity rate out of any country, it is important for Americans to monitor the fast food industry that may be causing obesity. With the pressure to get things done in a timely manner, fast food has become a big necessity.
According to the USDA, at the start of century 21st American people have increased their daily caloric intake by consuming five hundred calories more than in 1970. As cited by Whitney & Rolfes (2011), there are many recognized causes of obesity such as genetics, environment, culture, socioeconomic, and metabolism among others; but the cause most evident is that food intake is higher than the calories burned in physical activity. Excess of energy from food is stored in the body as fat causing an increase of weight. During the course of the last 40 years, obesity has grown enormously in the United States and the rates remain on the rise (pgs. 272-273).
Obesity rates have skyrocketed within the last 10-20 years. This is in direct correlation with the diet and exercise habits of cultures. As cultures begin to incorporate different culture’s cuisines into their own cultures, the obesity rate starts to increase. This is most likely caused by their heritage history being accustomed to their culture’s cuisine history. Then diet and exercise come into play as well. We live in a time where technology has almost taken over our lives. In modern day, we can drive wherever we need to go, we do not have to walk everywhere anymore; we do not have to even go to the grocery store anymore because Amazon.com has now made their website into a grocery store in select parts of the country where we pick what we need online and it is delivered to our house. This program is set to go nationwide soon, and eventually globally. This is the epitome of laziness and why different cultures are becoming obese; especially America. Diet and exercise have almost become a thing of the past in America. Yes, there is still a large amount of humans that still exercise daily, but not the average American. The most active age group, worldwide, is 22-34 year olds with an average salary of $20,000 or less (Thompson 2013). Cultures such as the Native Americans, Mexicans, Chileans, and the culture that tops the list; Americans, are among the world’s most obese cultures (Downey 2011).

After World War 2, lawmakers, big business and labor leaders, along with many ordinary Americans put mass consumption at the center of their plans for a successful post-war nation. The availability of frozen dinners and a variety and surplus of different foods skyrocketed. In 1977, the US dietary guidelines changed drastically, promoting our diets as mainly carbohydrate based. Over the years, the sizes of certain foods and our portions have blown up. Twenty years ago, an average bagel was 3 inches in diameter and only 140 calories. Today, the size of the average bagel has doubled, now 6 inches in diameter and over 350 calories. The health problems that stem from being overweight go way beyond the ones we usually hear about, like diabetes and heart disease. Being overweight can also affect a person's joints, breathing, sleep, mood, and energy levels. In the U.S. 68.5% of adults are overweight or obese, 34.9% falling under the obese category and 31.8% of children and adolescents are overweight or obese with 16.9% being obese (Overweight and Obesity in the U.S.). Obesity is a big social issue in America. Due to the popularity of fast food and other unhealthy foods, more and more Americans are developing health diseases and disorders. We should be getting the correct daily nutrition amount, but because of our fast paced lifestyles we sometimes do not have enough time. Fast food restaurants make it possible to grab a meal and go. We often do not pay attention to the nutrition amount, but are simply looking for a quick bite to eat that will fulfill our hunger.
