Food and cuisine is one of the most important and influential aspects of how a country's culture is shaped and by looking at how this has been accomplished, it is clear to see direct links between dishes and aspects of Japanese and Australian Culture. REFERENE By researching a meal from each country, Okonomiyaki and Damper, connections are made and analysed between identity, culture and the communication.
Cuisine is a big factor in the identity of a culture and many people will list food as a factor that makes a country what it is, even using Damper for an example, many people see it is an Australian classic and part of Australia's history. Analysing these two iconic recipes, we can begin to view what kinds of communication is used and by looking at this, the history and the shaping of culture we gain a deeper understanding of the impact and importance of food in both Australia, Japan and around the world. Through this analysis it is hoped that a better understanding of these topics is acquired and an in depth reflection is produced.
Both Okonomiyaki and Damper are fairly old and traditional recipes, today they are recognised as dishes famous to their respective countries. Damper is stodgy Australian bread, traditionally cooked over an open fire. It was originally cooked with plain sugar, no butter and only water. According to the historian Bronwick, William Bond invented Damper in the 19th century, yet the origin is still debatable because Aboriginal Australians were also known to make 'bush breads'.

The actual structure of this recipe is in steps (with English numbering characters) and it uses a great deal of Kanji, yet also uses plain form for all verbs. Again, English numbering is used along with katakana. The katakana words include things like ‘bowl’ ‘frypan’ ‘mayonnaise’ and ‘cabbage’. Etc. These Katakana words are directed from western words, most likely because they have been adopted from other countries. Mayonnaise is a good example of this was supposedly added in later. A possible reason that the word bowl is in katakana is that in Japanese cooking and eating, many specialised bowls are used. Much of the Kanji is used is in verbs and okonomiyaki itself. The way that the recipe is written, keeps the wording fairly simple.
In Lavanya Ramanathan’s Washington Post article published in 2015 titled “Why everyone should stop calling immigrant food ‘ethnic’”, she discusses about people’s preconceptions on the type of food that should be labelled ethnic. Ashlie Stevens also touched on a similar topic in her Guardian article published in 2015 titled “Stop thinking and just eat: when ‘food adventuring’ trivializes culture”. She talks about how people assume that just by eating food from a certain culture, they are able relate to the culture as a whole. Both authors acknowledge the importance of appreciating authentic cuisines, but takes different approaches to convince the audience. In the writing “If You Are What You Eat, Then What Am I?” Geeta Kothari describes the differences in the American and Indian cultures through her unique description of the food differences. As a little Indian-American girl, Kothari curiously wanted to eat what of kids her age ate, tuna salad sandwich, hot dogs, and foods of such nature. Kothari describes her first encounter with a can of tuna fish as it looks “pink and shiny, like an internal organ” (947). As Kothari ages, it becomes clear that she sees American food much the way her parents saw it- “repugnant… meat byproducts… glued together by chemicals and fat” (947). Even though Kothari describes American food as strange, disgusting, and foreign; it was also “infidelity” to eat it (951).
Australia does not have its own cuisine, it just borrows from its neighbours. Australia’s cuisine has been affected by many things including; migration, the potato famine of the 1840s and the ending of World War Two.
Current food trends in Japan consist of alcoholic beverages, imported pasta, cookie wafers, snow ice (a type of incredibly sweet ice cream), soft shell shrimp, tea and coffee.
In Michael Pollan’s “The End of Cooking” shares the message of what we are losing something important in this day and age because of all our pre-made and processed foods. This can be compared with Kothari’s “If You Are What You Eat, What Am I?” and her argument that food is part of one’s own identity. By using the examples from these two texts you can analyze the state of food and culture in the United States today. All of the processed and pre-made foods are causing people all across America to lose their sense of Culture. We no longer know what it’s like to make one of our cultures specialty dishes from scratch which can help people identify with their culture. This process helped newer generations see what it was like for those before them to cook on a daily basis and could help them identify your sense of culture.
The phrase, “We are what we eat” holds some essential validity and truth to it. Food is a constituent feature of our environmental ties to where we subside. It is a part of our daily lives. It can act as a form of communication with other individuals. Food can be an indicator of the nutrition idiosyncratic cultural groups are practicing. Dishes are usually chosen to suit the seasons. For example, in winter the hot pot-like sukiyaki dish is served, especially around New Year’s. To eat sukiyaki, one dips thinly sliced beef into soup until it is cooked. While meat like sukiyaki is common, foods like barbecue, a common summer food in America, are not usually eaten. Aside from meats, the main things that the Japanese eat are rice, seafood, and vegetables. The main meal Americans know about, is, of course, the famous sushi. In Japan and most authentic Japanese restaurants, California rolls are actually not the most common type of sushi. There are many types of sushi, such as tamago (egg) or inarizushi, which is sushi rice wrapped in fried bean curds. Sushi is always made with vinegared white rice and often wrapped in seaweed or with raw fish that can also be eaten individually as sashimi (“Food”). Wasabi, or green horseradish paste, is used to kill germs that may be remaining on the raw fish. Ginger is eaten after every individual piece as a palate cleanser. Throughout every day, people are influenced by different foods and become passionate about a particular style or taste. A defining trait of every country, whether it be Italy or India, is the type of cuisine that they serve. One of the best ways to gain an understanding of a country’s culture is through their food. While some people would deem other aspects of a culture as more important, it is a feature easiest to explain and relate to. A distinguishing fact is that food is both physical and mental in that its creation takes dedication and effort; food is able to create emotions given the proper setting. As cooking traditions evolved throughout the years, to fit people’s ever changing tastes, so does the culture. They are parallel to each other in that as one aspect of culture changes, so does the food and vice versa. Two of the most popular types of foods in society today are American food, and Chinese food.
