Is the Pizza from NYC/LI better than the rest of New York State and the rest of the country? According to most people from this region, the answer would be a resounding, Yes!. There are many factors in which LI pizza excels; crust, sauce, cheese, toppings. There are a couple of theories that account for the deliciousness and recognition that LI pizza gets. This pizza has recognition the world over and it the picture that people get when pizza is mentioned, is the New York style pizza. It is claimed that the mineral composition of the tap water is what makes the dough have a specific flavor. There are some Pizzerias around the country that got their start in the NYC/LI are but moved to a different state, that have the tap water shipped to them from NYC/LI. There are some people that support this claim because the “Italian” argue doesn’t apply so much anymore. It used to be argued that only Italians made the best pizza but in recent years some of the most acclaimed pizzas are from Greek owned pizzerias. It may be the Italian recipes but some pizza enthusiasts claim that the reason if that the tap water gives the high-gluten dough a much better flavor and that there is a reason that it cannot be replicated in other parts of the country or even the state. Therefore, food became a major source of family conflict between generations. But, through inter-generational negotiation, food was ultimately to become a fundamental unifying force of the Italian-American family. Today, in light of the rise of inter-ethnic marriage rates between Italians and Italian-Americans in America, a new form of negotiation centering on food is taking place within the Italian-American family—‘inter-spousal’ negotiation.
