That’s right some people even follow a vegan lifestyle where they don’t use any products that were either tested on animals or includes any animal bi-products. Add the onion and cook until it is turning translucent, stirring often, about 5 minutes. Add the ginger, turmeric, curry powder and cardamom and stir until fragrant, about 30 seconds. Pour in the coconut milk, water, rinsed quinoa and raisins. Bring the mixture to a boil, then cover and reduce heat to a simmer. Cook for 15 minutes, then remove the pot from heat and let it rest for 5 minutes.
Fluff the quinoa with a fork. Stir in the salt, vinegar and greens (if you intend to eat this dish as leftovers, I recommend storing leafy greens separate from the quinoa, as the greens don't reheat well). Divide the quinoa into bowls and top with roasted cauliflower. Garnish with green onions and red pepper flakes if you'd like.

Many become vegan as a way to protest and eliminate animal cruelty which is extremely apparent in the meat industry. A vegan diet is based largely on fruits, vegetables, grains, nuts, and soy. Many people would say this is unhealthy, that a person cannot live like this. Much of this skepticism comes from being misinformed, and under informed about veganism. Marinate the slaw tossing the raisins, beets, onions and carrots with the orange and finger sauce, cumin, coriander, pepper and salt then cover and chill.
Combine ingredients in a small pot and bring to a boil over medium heat, stirring often. When it thickens, remove and add toppings of choice. Dig in. Note: Coconut milk, soy milk, or other substitute will work in this recipe.

For those who do not know what a vegetarian is or are confused on what they do or eat let me inform you that being a vegetarian simply means that you go off of plant-based diets. Although there are several kinds of vegetarian diets, it is all based on what type of food you are consuming. For financial and health concerns, many Americans are consuming less meat and poultry; approximately one third of Americans follow a diet centered upon vegetables and whole grains, with the occasional consumption of meat. Nonetheless, meat consumption per capita is still extortionate in America—the highest per capita with the exception of Luxembourg—largely due to its ingrained nature in our economy and culture.
In a separate bowl cut the large scallions and half medium cabbage to small pieces. Peel and chop the potato, malanga, carrots, turnip, yam and the butter squash. Unless the intention is to shorten one’s lifespan, the Western diet, respectively, has it all wrong. On any given day, Americans are found consuming excessive amounts of meat and dairy products.
