The country of Peru is exquisitely diverse with geography containing the Andes Mountains and highlands, the tropical/Amazon Basin and the coast. All of which contribute significantly to the Peruvian cuisine. Peruvian cuisine is a unique blending of Andean and Spanish cultures over 500 years, mixed with Japanese, Chinese, African, Arab, and other influences (Cayo, 33). With the cuisine being a fusion of many different cultures, it retains unique elements of each and creates a distinct cuisine of its own making it unmatched in its diversity and individuality. There is not an exact single “Brazilian food” but there is an assortment of various regional traditions and typical dishes. The diversity is linked to the origins of the people inhabiting each region. For instance, the culinary in Bahia (city in Brazil) is heavily influenced by mix of African, indigenous and Portuguese foods. Chili and palm oil are very common. But in the Northern states, due to the abundance of forest and freshwater rivers, fish and cassava are staple foods. In the deep south more traditional foods will be shared with their neighbors Argentina and Uruguay, with many meat based products, due to this region livestock. One of the principal food in Brazil is the “Churrasco”. For example, one of the most well-know Brazilian street foods is “ Acaraje “, wchich are fried balls of shrimp and onions. Fried rice balls are similar to hush puppies made with rice instead of corn meal. And be sure to try “Empadinhas de Palmito” which are small empanadas with a hearts of palm filling. Coxinha” are my favorites, that is chicken croquettes made to look like drumsticks. Another type of food in Brazil that I like to much is the desert that calls “Brigadeiro”. Feijoada , when you see what have there you might think that Is not good food but when you try you will love it. In feijoada has black beans with pieces of beef and pork added to it. Churrasco, in Brazil it simply refers to a barbeque, which is almost comprised of large chunks of meat cooked on skewers. If you go to Brazil, you need to go in a churrascaria, is a restaurant that has all types of meat.

In the 21st century, Americans take for granted the history of the food they eat, and the origins of the foods that are eaten today. In the early part of the history of the United States, people of European descent brought recipes from home and adapted their recipes to the ingredients which were available. The slave trade was directly responsible for what many Americans think of as American food, and those foods are traceable to Africa. There are many different types of food to choose from. This food is found in casetas, which is a tent or side stand set up around La Feria de Abril. Casetas typically serve olives, ensaladilla, various meat dishes, revueltos, and pescaito frito. The revueltos are made with scrambled eggs, hams, asparagus or mushrooms. The pescaito frito is a mixture of prawns, calamares, tiny octopus, acedias, dog fish, along with other seafoods. Casetas also provide drinks for the visitors of the fair. One of the drinks served is rebujito, which is an alcoholic beverage mixed with lemonade. Fruit juices and mineral water are also provided in casetas.
