Every one of the nutrients needed in her diet Emma is deficient in has a specific function. -Proteins are essential for organ function, and possess the building blocks of life. Emma may have had adequate protein, depending on her serving size of chicken. We will need to discuss the quality of protein; however, as fried foods and meats that are not lean are not the best choices. -Carbohydrates are a primary source of fuel for her baby’s growth and development. They occur in two forms: complex and refined. Complex carbohydrates release energy slowly. Refined carbohydrates are more sugary and tend to release energy fast, leading to a sugar crash. Emma chose carbohydrates that were refined in her diet history. -Fats are good for body energy stores and contribute to healthy development of cells. Omega-3’s are best found in fish, of which there is no record of Emma having in her diet. -Vitamin A is necessary for eye and neurological development. This is found in fruits and vegetables, both of which were lacking in Emmas’s diet. -Vitamin B (folic acid) is known for helping to prevent neural tube defects. Vitamin B is found in fruits and vegetables, both of which were lacking in Emmas’s diet. -Iron is necessary for red blood cell production, as well as fetal and placental growth. Emma had a hamburger and some chicken. Depending on the serving size of each, she may have gotten the necessary iron requirements for the day; however, a discussion on empty calories may need to be in order. -Calcium and vitamin D are important for fetal bones and teeth development. Although Emma had a cup of milk with her dinner, and possibly some real cheese on the macaroni and cheese, she is still lacking with her three cups per day requirement for
