Introduction
Expanded food and Nutrition Education Program (EFNEP) (Chatham County Extension) located in Savannah, Ga was my choice of practicum site because of my interest in healthy eating habit and my passion to reach the low income populations. EFNEP teaches healthy habits that fit citizen’s budget. Families learn about healthier food choices, about stretching their food budget, and about reducing the risk of foodborne illness. The program is offered to low-income Georgians, free of charge. It is federal funded program. The mission is to improve health behavior of low income Americans. Their target is to reach low income parents and other adult caregivers who are responsible for obtaining and preparing food for children, low income pregnant women or teen.

The lessons were called Food Talk. Food talk is about 1 ½ hours better food budget and to cultivate healthy eating habit. Food demo is always done after each session, the food demo enables the client to try the food, which are healthy and affordable. The clients were given extenders; after each session, the extenders serves as tools to help put lesson learned into practice.
Session 1; Your Food Your Choice; this is the introductory session, clients were enrolled in the classes. They were given calendar to make a list of the food eaten in the last 24hours, they discuss about their meal, why they chose it. Alternative food choices would be suggested to the clients, then the food demo.
Session 2; keep Your Pressure in Check; this session discussed how families can plan ahead for their meal to reduce stress. It discuss how planning can make a difference in stress reduction. Although many of the towns people do not have the knowledge to make healthy meals, Obama’s “Let’s Cook” video series can inform families on how to cook affordable, healthy, fast and easy meals. The video series can only work if the word gets out into the community. Since kids in Manchester are active on the internet, doing something as simple as advertising at the local school or holding a school wide meeting could inform students about Obama’s “Let’s Cook” campaign. Having a mandatory parent meeting could also assist in getting the word out about the campaign. Families like the Robinson could benefit immensely from this campaign. Scott Robinson is a single father rising his two daughters. His daughters know all the fast food restaurants and their menus, giving the impression they eat out quite often. The federal Food Stamp Program is an assisted nutrition program that helps millions of eligible, low-income individuals and families (United States Department of Agriculture). This program gives its recipients extra money each month to try to help them have better food security. The Supplemental Nutrition Assistance Program is also the largest program in the federal safety net (United States Department of Agriculture). In Ohio’s Appalachian counties, there are 515,300 recipients which is 25.4% of the population (Job and Family Services). The Supplemental Nutrition Program is a good program except for one problem that can be fixed relatively fast and one problem that it will take a little time to solve. The problem that can be fixed right away is that the Supplemental Nutrition Program can be abused by the recipients buying junk food instead of healthy food. The problem that will take some time to fix is that some recipients make unhealthy food choices because they do not have access to a local supermarket. In order to fix these two problems the Food Stamp Program needs to better regulate what can be bought with the Food Stamp card and items in convenient stores need to be better stocked in order to keep accepting Food Stamp cards.
The Supplemental Nutrition Assistance Program has been very beneficial to many households that do not know where their next meal is coming from by providing them with resources to acquire food. Many of those food insecure households, however, are faced with high rates of obesity that leads to a variety of other health issues. Research has shown that increasing nutritional education through programs that teach people to read labels and balance their diet works and can decrease obesity rates. Low income and minority households, the populations most affected by the issues of food insecurity and obesity, are especially in need of nutritional education. By expanding nutritional education for those households most at risk of obesity, a public health initiative could decrease the obesity levels in SNAP participants.

Eating meals together as a family will encourage an environment that not only promotes healthier eating, but also allows time for family, for communication, nurturing family traditions, and their children learn life skills (Kaakinen et al., 2015). I will assist and encourage this family to find the time to shop, prepare, and eat together meals that are nutritious as well as healthy. Information and guidance would be provided to help the family understand the daily nutritional requirements of not only themselves, but also for their children. This family would need to take the initiative to learn the nutritional contents of food and be able to incorporate it into meals that provide these daily requirements. Eating nutritious food may seem simple enough, but to those that hardly get by financially, affording healthy foods can be a major hindrance. This is proven by Dr. Jim Levine, a researcher with a concentration of the link between poverty and obesity. He is quoted stating, “In many poverty-dense regions, people are… unable to access affordable healthy food, even when funds avail.” (Sifferlin 1) For example, further studies show that the average cost of salad is $1.50 more than the average cost of a hamburger. Getting vitamins and minerals from the food we eat is substantial to survive in everyday life. Annually, it costs five hundred and fifty dollars more to eat healthier. Five hundred and fifty dollars may not seem like much, but to those that have low income, it is a crucial amount. While achieving a healthy diet proves to be necessary to maintain a healthy weight, it is almost inaccessible for those with low income. Anthelme Brillat-Savarin wrote in 1826 “Physiologie du Gout, ou Meditations de Gastronomie Transcendante.” that “Dis-moi ce que tu manges, je te dirai ce que tu es. [Tell me what you eat and I will tell you what you are].” Too much or too little of nutrition is not good for health. The proper well-balanced diet and proper fitness build the healthy body. Therefore, it is important to know how to stay healthy to avoid the diseases. ...in order to show the participants that cooking at home is an easy task. This will increase their self-efficacy. During this program, participants will be trying to lose 2-10% of their body weight in 6-months’ time. By losing a little weight, they will see that they can achieve weight loss, and will continue to try and lose weight. The reinforcement construct refers to rewards or punishments someone gets for doing something. By going to every meeting, participants will be rewarded by small prizes. This will reward them for coming, and they will be more likely to return. Fact sheets, brochures, and a series of print materials will be used to teach the participants and motivate them to participate. By completing this program that has been based on the Social Cognitive Theory, participants will lose weight and learn about how to eat a healthy diet in their daily lives.
I read the poem “Bloom- is Result- to meet a Flower” by Emily Dickinson three times in order to fully understand the meaning. The first time I read the poem I read it silently as I did research. The second time, I read it out loud in order to make sure I didn’t miss any details. The final time, I read the poem I wrote it out to get write as if I was the poet to understand her writing better. The first time I read it, it took me fifteen minutes because I was looking up words and taking down notes.
Healthy and affordable food choices on the go or even just in the store is a huge and worldwide ongoing problem that of course cannot be fixed overnight. To help start and put one foot forward to improvements in the availability of healthy food options and choices in lower income neighborhoods, we as a community and as a whole should do the following. Many different methods could be tried to help solve the problem. This is simply because one method may not work as well as the other. As Denis Waitley says “Failure should be our teacher, not our undertaker”.
On some days, teachers would pile us with homework and also as the school examinations were around the corner, we had to ensure we used our time wisely. Thus to avoid wasting time by preparing food from scratch I usually go to the hawker centre that is a stone's throw away from my hair. This one advantage of having hawker centres in singapore. As hawker centres are ubiquitous in singapore, under most public housing blocks or next to it , we can find a food court. Thus, this allows me to save on travelling to hawker centres and thus can use the time that I had save to concentrate on my studies. However, I have also learnt that regular consumption of food from hawker centres unhealthy, at time I would take the extra effort to cook for myself. Food is essential in everyone’s daily life. Keeping an eye on my personal eating diets is very helpful to live a healthy life. The food diary is recorded once a week, with information of the food I eat during the day and my initial observations. My experience is very enlightening.
