A crepe is a thin pastry type pancake made from wheat flour that can be filled with a variety of sweet fillings to produce a classic sweet dessert from France. The word crêpe is French for pancake and is a derivative of the Latin word crispus which means “curled”. Crepes originated in Brittany, a northwest region of France, between the English Channel and the Bay of Biscay. Crepes were formerly called galettes, which means flat cake and were served with meats and cheeses resulting in a savory crepe. Even though crepes originated in France, their consumption is now widespread throughout the world.
During the 12th century, when buckwheat arrived in Brittany, they started grinding down the buckwheat and mixing it with water and salt. In North Brittany the buckwheat galatte was cooked in a frying pan on one side only and filled with meat products: however, in South Brittany, they were cooked on both sides and on flat stones. Around the 20th century when white wheat flour became affordable did crepes start being made with eggs, milk, and butter.
