Brain Based Nutrition Lesson
BACKGROUND
I teach English as a second language to adult migrants in Australia. As such, my students are a diverse population from all over the world. they come from a variety of different generations, within multiple socioeconomic groups, and from various educational backgrounds. The Navitas program I work for, offers 3 different certificate levels designed to provide students with a proficient level of English. My course leads students to a certificate II in spoken and written English.
A month and a half ago we did a short lesson on nutrition. It was part of our food and grocery unit. For the lesson, I invited a local nutritionist to come do a short ten-minute talk with my students. Next, I asked my students to do a think-pair-share exercise. They paired with a partner and independently thought of a meal they had last week. Then, they discussed how they could improve the meal to make it more nutritious. Using Eric Jensen’s teaching model (Jensen, 2005), I have reconstructed this lesson to follow a brain based compatible lesson plan.

The seating, temperature, lighting, and noise around us can affect our brains. Thus, it is imperative to ensure before every lesson that our teaching environment is comfortable. I support a welcoming i classroom. I enforce class rules to respect one and another. All my students should feel safe and secure in my class. I also arrange my seating in a semi-circle or circle to create an environment that promotes discussion. I want to ensure my students feel comfortable asking questions and participating. Furthermore, I keep the classroom light and bright by opening the blinds to let in the natural light from outside. Nutritionism and Today’s Diet Nutritionism is the ideology that the nutritional value of a food is the sum of all its individual nutrients, vitamins, and other components. In the book, “In Defense of Food” by Michael Pollan, he critiques scientists and government recommendations about their nutritional advice. Pollan presents a strong case pointing out the many flaws and problems that have risen over the years of following scientific studies and government related warnings on the proper amount of nutrients needed for a healthy diet. The space and area in which a child is learning must be accommodating to all of their needs. A responsive environment is a space of any size that is set up and presented in a manner that promotes social-emotional development, physical development, spiritual development, intellectual/cognitive and language/literacy skills. It is important that the class or room promotes a healthy learning environment which allows the children to be independent while still pushing their skills and abilities. Environments are able to shape and direct a child’s learning experience, “We now know that the environment is a valuable teacher if it is amiable, comfortable, pleasing, organized, clean, inviting and engaging…This is true of floor space, ceiling, and wall space” (Krentz, Emerita, & University of Regina, 2013, p.44).
Nutritionism is an ideology that believes that the nutrients in foods are the key to understanding them. Nutritionism believers are so focused on the nutrients that food contains that they forget about all other aspects of food. The problem is that consumers rely on packaging to tell them what nutrients a food provides, since nutrients cannot be obviously seen, and they rely on science to tell us what nutrients are good and which are “evil”.
It is day one of your weight lifting program and you are ready to start your body transformation. Nutrition is not only 90% of the battle when it comes to improving all the aspects of health and fitness. It can be the ultimate reason why you may not be seeing any results. Trust me, when I say that iit has taken me years to figure out what foods, how much to eat, and how often to eat. What makes this challenging is everybody is different. I feel that in order for students to prosper they must be comfortable with their learning environment. I plan to have an well-organized classroom with various bulletin boards highlighting current chapters of study, as well as announcements and assignments. I also believe that you must keep students both interested and involved to achieve successful learning. Desks in my classroom will be organized in one large “U” formation facing my desk in the front to create a feeling of unity and coherence. To further promote this goal I will assign a seating chart (possibly alphabetically) to aid in the diffusion of cliques and to avoid exclusion of these who may have the tendency to be isolated. Individual and group projects will be incorporated into my curriculum to provide students the opportunity to work both independently, as well as a team member.
I believe that each child is a unique individual who needs a secure, caring, and stimulating atmosphere in which to grow and mature emotionally, intellectually, physically, socially, and academically. It is my desire as a future educator to help students meet their fullest potential by providing an environment that is safe, supports risk-taking, and invites a sharing of ideas. There are two elements that I believe are essential to establishing such an environment, (1) allowing the child’s natural curiosity to direct his/her learning, and (2) promoting respect for all things and all people.

When building a classroom, the indoor learning environment will be influenced by the building and play area that surrounds the building. A classroom needs to have adequate space for children to play, explore and learn. Children need to have continuous access to water, bathrooms and a sink for handwashing. Although each room or center will be different they need to maintain areas that are easily and safely supervised from all areas of the classroom. The space needs to be organized into learning centers with well-defined areas. Areas such as science, art, sensory, bathrooms and eating areas need to be near a water source. Other areas such as block areas, library and housekeeping should be kept in areas with large area rugs or carpet.
Most of the body’s functions such as, thinking, emotions, memories and so forth are controlled by the brain. It serves as a central nervous system in the human body. The mind is the intellect/consciousness that originates in the human brain and manifests itself in emotions, thoughts, perceptions and so forth. This means that the brain is the key interpreter of the mind’s content. Jackson and Nagel seem to resist identifying what we call “mental events” with brain events, for different reasons, while J.J.C. Smart takes the opposing view.
Mindfulness unlocks your senses. It is the practice of being fully aware of what is happening within and around you in the moment. This is not easy to do! Practicing mindfulness helps people make better choices in regards to what and how they eat. There is a lot to learn here, but taking simple steps like noticing the smells, temperatures, textures and tastes of the foods in your meal is a good place to start. Mindful eating also requires you to reduce distractions such as physical, mental, social and emotional ones. People often find that they enjoy their food much more once beginning more mindful approaches to eating. Mindful eating also seems to improve food choices, in both what and how people eat. It essentially reshapes your relationship with food and makes eating more enjoyable because you learn your reactions to food preferences, habits and tastes.
The environment of the classroom is important because is a social place where children have to feel secure so they can become part of the lesson and for the lesson to succeed. For teachers to be effective their classrooms should be open, encouraging and safe environments, where a strong student-teacher relationship can be achieved (Marsh, 2008). Students should be treated with respect in order to meet their need for belonging (Eggen&Kauchak, 2010). The layout of the room and resources need to be well considered allowing different areas for different activities (Bennett &Smilanich, P. 1994) keeping in mind space for easy movement and creative work. People is always asking: “Why is important to have a balanced diet? Why is necessary to have a balanced diet on a daily basis? And why do professionals tend to recommend a balanced diet?” The human being has essential needs to its existence: breathing, feeding, and keeping the body in constant movement. The majority of the people are aware of this, but they do not have a balance among these things and even more important they do not eat the adequate food to keep their body healthy. Food is one of the most important factors because it gives the energy the body needs daily. In other words, few words food is the fuel that provides glucose, which is carried to each cell of the body through the bloodstream. This process is extremely important and this is influenced by the type of food that each person consumes. A balanced diet is important for human beings, and makes reference to a good nutrition with regard to the food they eat; which contains macro nutrients that are carbohydrates, fats, and proteins; these provide energy and basic materials that the body uses to grow and stay healthy.
