Public health consists of organized efforts to improve the health of populations, with the goal to reduce disease and improve health in a population; society’s desire and specific efforts to improve health and wellbeing of the total population, relying on the government, private sector, and the public, by focusing on the determents of population health.1 One of the determents that is modifiable to help reduce health disparities is nutrition. While nutrition is only one component of the overall health picture, it is a vital element in reducing health disparities such as heart disease, diabetes, and cancer. It is so exciting to see the world of nutrition becoming recognized as invaluable in the public health arena. I currently work with oncology patients that are receiving radiation and chemotherapy to help provide symptom relief through nutrition management. This is an area of public health that I feel benefits greatly from nutrition education, support, and encouragement. I also help to provide oncology screening programs, obesity management programs, and generalized nutrition education programs to a small community population. It is the hope of the facility where I am employed that through preventative efforts we can impact the overall incidence of cancer rates in our community. I love being able to sit with patients to provide the nutrition education that may help them manage their symptoms, improve their overall health status, or simply provide them with reassurance that they are supported in this journey called life. I feel like God called has me to where I am in life to help these individual either via nutrition or just to share a word of encouragement that may help them make it through that day of treatments. Upon completion of my completion of my Master in Public Health I look forward to applying the skills, knowledge, and expertise that I gain to my current position to help provide my patients with the most up to date and current

Proper nutrition is important in maintaining a long and healthy life. Most Americans are rushed due to their busy work schedules, and do not take the time to plan their diets properly. Like me, most Americans are unaware of the importance of eating a healthy diet and consume too many foods without the proper nutrients. Throughout my life I have been fortunate. I have not had any major health problems, and have been able to consume most foods without having to worry about gaining weight. These last two years, however, I started to gain weight and have become concerned with my diet. Changing my poor eating habits has been difficult for me, however, having this assignment has taught me that it is not as difficult as I previously imagined.
Since 1916, the United States Department of Agriculture (the government agency responsible for all U.S. policy regarding agriculture, food, and farming) has revised their recommendations several times. Unfortunately, money talks and the USDA’s recommendations are based on outdated science and are influenced by people with business interest. Education plays a dominant role in the lives of students all over the United States. Since most students spend roughly eight to twelve hours in school, it is important to make sure that they are provided with a healthy and nutritious breakfast, lunch and snack.
Based on a variety of personal experiences, I became very interested in the role of foods and nutrition. During my last year of highschool, my favorite who had a successful business succumbed to a strange alliment. He was tired all the time and was diagnosed to live only 1 year. While he didn't have cancer, his bloodwork had many abnormalites the doctors couldn't diagnose. He began to seek out other doctors who ultimately recommended that his see a dietitian. This changed his life. He started to eat low fat foods thats packed in vitamins, quit smoking and drinking and started to exercise regular bases. One year later, he could get out of bed, live as an full energetic person as he had before. This made him inspired to study nutrition in America. I was overwhelmed after I knew his history and never looked at food the same way again. It is clear to me now that how people eat and what people eat is an important factor in acheving optimum health, that just exercise isn't enough.
Although the treatment process was often frustrating and challenging, I actually came to enjoy my appointments with the nutritionist in her tiny, cozy office, cluttered with food models and recipes. She taught me the basics of nutrition and helped me form a healthier relationship with food. It took time and quite a few tearful sessions, but I slowly started to view food in terms of the nutrients and benefits it could offer me instead of thinking of food as the enemy. During my recovery, I experienced the powerful impact that proper nutrition could have on overall health. I gained back all the weight I had lost, and my hair stopped falling out. Improving population health necessitates a variety of the contributions from health entities. These health entities can be state, local governments, hospitals, health centers, and community organizations. Unfortunately, these contributions and services are not equally distributed throughout the population. Lack of a supermarket in a neighborhood limits residents’ access to healthy food and other resources. Furthermore, ethnic minority and/or low-income communities are burdened with several health disparities such as greater risk for diseases, or limited access to healthcare services (Jackson, 2014). Being one of the leading countries in Health technology and also in food and beverage leaves most people choosing between living a healthy lifestyle and indulging in the varieties of food we offer. Across the country, many people are living with pre-existing conditions, living in food deserts, living below the poverty line and a long list of other factors that either hinders them from eating healthy or force them to eat healthily. When trying to live a healthy lifestyle in this country not only does the promotion of prevention matter, but also the promotion of Career and job opportunities matter just as much. In the United States, Money equals Power and money also equal the opportunity to create and live a healthier lifestyle.
Proper nutrition is one of the most essential elements to being healthy and living a long life. People deal with food every day, and food has been a part of life since the beginning of civilization. What we eat becomes our diet, and our diet plays a major role in deciding how healthy we are and how well our body functions. Without proper diet, our body cannot carry out the functions it needs to perform. Most people have some common knowledge on what is good and what is bad for the human body to consume. Fruits, vegetables, nuts, and grains are some common items people think of when they think of healthy foods. However, it is not enough just to know what foods are good for your body, it is also important to understand why certain foods are good for you and what they do to help the body function.
My field practicum at the University of Hawaiʻi Cancer Center Nutrition Support Shared Resource would be a great experience for other students interested in public health, epidemiology, cancer prevention, and population dietary assessment. It would not be as relevant to students interested in clinical dietetics or food service because clients, patients, or customers are not interacted with and no food is served.
