Throughout the course of the semester in Italy I learned the importance of food and cuisine in Italian culture and society. Italian society is unique in that the cuisine cooked is always in season, using fresh local products and ingredients grown close to home. In today’s society it is extremely important to preserve the tradition of cooking, by preserving the heritage in which the food comes from. Street food has also been around for a long time and a staple of Italian history. 2004 was a great year as the Terre Madre project was a food community that went global, cultivating worldwide and giving back to other countries. “ Terra Madre brings together those players in the food chain who together support sustainable agriculture, fishing, and breeding with the goal of preserving taste and biodiversity” (Terra Madre, 2015) . “Cucina povera might mean, “home cooking,” but not in Naples. “Here,” Antonio Mattozzi remarked, “Cucina povera used to be synonymous with cibo di strada”—street food, both cooked and eaten in the street. The phenomenon was dictated by economic and social necessity, born of a hungry competition for anything edible” (Milva, 196) . Street food consisted of easy to make and eat food such as pizza. Although many places exist and sell these products on the street, it is important to note they are regionally or locally owned and the ingredients they use for their community freshly provides their food. “ Slow food is governed by irony and by a spirit of wholesome enjoyment” (Milva, 181) . This is where the slow food organization plays a role, as the animals and products they save also have an effect on the street food
