It's always good for the photographer to have an extra set of hands. While some photographers use the parents as spotters, the parents aren't professional photographers. They shouldn't be used as spotters.
Positioning and Safety
The photographer is behind the lens, which means she could be a few feet from the baby if there's an issue. Babies are top heavy, and can fall quite easily. When there's a spotter next to the baby, the little one is in no danger. Often, the spotter has a finger or hand in the shot to hold the baby in position and be close in case of a problem.
