My mother developed type 2 diabetes in her late 30’s, and I witnessed her injecting herself with insulin each morning to ensure that her body functions well throughout the day. That’s not something anyone would look forward to on any given day. Consequently, I would like to be part of a change to find a solution for that situation. It has always intrigued me how the same foods that are necessary for the nourishment of our bodies are the same foods that can cause some of the worst and most life-threatening diseases and illnesses. Ideally, these same foods are able to cure these illnesses as well and that’s what I want to maximize on. The chemistry of the human body and how it is affected by food is one of the main reasons why I became interested in nutrition. I came from a household where my parents did not have more than a high school education, and as you can imagine, this caused them not to have the best jobs either. It is as a result of this that I saw the importance of getting an education. Regardless of their financial situation, sacrifices were made to ensure that my education was always a top priority. It is for this and many other reasons why I 'm driven to achieve all that I set out to do. My strengths as an individual are that I am patient, determined, hardworking, ambitious, a team-player and I easily adapt to changing environments. I am a problem solving oriented individual and I am not a quitter. I am capable of proving myself and with my vast experiences in various areas, I can apply my strengths and technical skills. I am ready to give of my time and effort to focus on the research I will be undertaking. I have an unquenchable passion for Biology, Food Nutrition and Health, and I look forward to being a part of the ever-growing food
Michael Pollan, an American author, journalist, activist, and professor of journalism at the UC Berkeley Graduate School of Journalism (Michael Pollan), writes in his book In Defense of Food, the dangers of nutritionism and how to escape the Western diet and subsequently most of the chronic diseases the diet imparts. In the chapter “Nutritionism Defined” Pollan defines the term nutritionism. Pollan’s main assertion being how the ideology of nutritionism defines food as the sum of its nutrients, and from this viewpoint Pollan goes on to write how nutritionism divides food into two categories, with each macronutrient divided against each other as either bad or good nutrients, in a bid for focus of our food fears and enthusiasms. Finally, Pollan concludes that with the relentless focus nutritionism places on nutrients and their interplay distinctions between foods become irrelevant and abandoned.
During the year 1889, two researchers, Joseph Von Mering and Oskar Minkowski, had discovered the disease that is known today as diabetes. Diabetes is a disease in which the insulin levels (a hormone produced in unique cells called the islets of Langerhans found in the pancreas) in the bloodstream are irregular and therefore affect the way the body uses sugars, as well as other nutrients. Up until the 1920’s, it was known that being diagnosed with diabetes was a death sentence which usually affected “children and adults under 30.” Those who were diagnosed were usually very hungry and thirsty, which are two of the symptoms associated with diabetes. However, no matter how much they ate, their bodies wouldn’t be able to use the nutrients due to the lack of insulin. This would lead to a very slow and painful death. In 1922, four Canadian researchers by the names of Frederick G. Banting, Charles H. Best, John J.R. MacLeod, and James B. Collip had discovered a way to separate insulin in the pancreas of dogs and prepare it in such a way so that it can be used to treat diabetic patients. In the year 2008, there were 1,656,470 people who suffered from diabetes in Canada, and by 2010, it is predicted that this disease will take over the lives of 285 million people . Although there is no cure for diabetes, the treatment of prepared insulin is prolonging the lives of diabetics and allowing them to live freely. Nutritionism is the ideology that the nutritional value of a food is the sum of all its individual nutrients, vitamins, and other components. In the book, “In Defense of Food” by Michael Pollan, he critiques scientists and government recommendations about their nutritional advice. Pollan presents a strong case pointing out the many flaws and problems that have risen over the years of following scientific studies and government related warnings on the proper amount of nutrients needed for a healthy diet. The question comes up again; “How is your diet?” Jessica revisited her diet analysis from the first week of class. She noticed that some things have changed and some things, unfortunately, have not changed. She knew that some things would not change because of the hectic and busy semester and summer she had ahead of her but the things that did change surprised her. This class did some good for her, but she still needs some work on her diet and nutrition.

In June of this year my family physician placed me on a doctor assisted weight loss program that enabled me to eat my favorite foods but in appropriate proportions and in heathier ways. Nutritionism is an ideology that believes that the nutrients in foods are the key to understanding them. Nutritionism believers are so focused on the nutrients that food contains that they forget about all other aspects of food. The problem is that consumers rely on packaging to tell them what nutrients a food provides, since nutrients cannot be obviously seen, and they rely on science to tell us what nutrients are good and which are “evil”.
For years, I have been eating what I want. Food choices are a significant factor that affects our health. What we like or crave, often, is the determining variable in what we eat. Finding the right balance of food choices is the key factor in improving our health benefits. Choosing nutrient-dense foods will provide more nutritional value than foods that are found to be low in nutrient density. Making the right choices in foods, however, is extremely difficult. So, if we do not eat healthy, we will get sick easily; especially having malnutrition, obesity or anorexia.
Based on a variety of personal experiences, I became very interested in the role of foods and nutrition. During my last year of highschool, my favorite who had a successful business succumbed to a strange alliment. He was tired all the time and was diagnosed to live only 1 year. While he didn't have cancer, his bloodwork had many abnormalites the doctors couldn't diagnose. He began to seek out other doctors who ultimately recommended that his see a dietitian. This changed his life. He started to eat low fat foods thats packed in vitamins, quit smoking and drinking and started to exercise regular bases. One year later, he could get out of bed, live as an full energetic person as he had before. This made him inspired to study nutrition in America. I was overwhelmed after I knew his history and never looked at food the same way again. It is clear to me now that how people eat and what people eat is an important factor in acheving optimum health, that just exercise isn't enough.

Nutrition is an important key to learn and understand in your life while you get older. Many people do not know the proper diet and exercise to keep their body healthy and strong. Throughout this course, I have learned information on different kinds of vitamins, carbohydrates, amino acids and other helpful diets. After reading and logging my dietary log for a week it has helped me re-organize my diet and health. I have learned about how to personally manage my exercise and diet and I am seeing some good results because of what I learned from this class. I started to see what I was missing in my diet and started to know what quantity and quality was for your diet. I also took a leap into my family health history to see what I need to change
Being aware of what is bad from good for one's body does not only benefit myself, but can benefit others as well. I chose to have the same meal for breakfast, lunch and dinner for three days, not in a row, of course. So day one, two and three will look the same; it is roughly what I consume on a regular basis, I really didn’t have to alter my meals much at all, only to make sure I had the same meals each day.
