Food was the fuel of, and catalyst for, the genesis of civilisation. Agriculture is the still evolving outcome of a human journey taken over thousands of years from the animal herding, foraging diet of the Palaeolithic to the agricultural surplus of the Neolithic to the meeting of the Old and New Worlds and later the industrial revolution leading to modern farming methods. The domestication of wild plants and animals led to the birth of civilisations around the world. Adaptation of the environment using technology coupled with the selection and propagation of desirable traits in plants and animals is still the basis of successful agricultural production techniques today.

Humans first started to dabble in the control of wild plants which included weeding, irrigation and propagation of root crops such as yams (Forrester, 2006). The domestication of plants and animals resulted in a process called ‘artificial selection’ whereby the continually favouring of certain characteristics by humans improved their usefulness as agricultural crops (Feder, 2011). Recent discoveries suggest figs were domesticated 11,400 years ago in the Near East, one thousand years before cereal crops and five thousand years earlier than other fruit trees, and are the oldest evidence for plant propagation. 12,000 years ago, the discovery of agriculture triggered such a change in society and the way in which people lived that we now call this important era in time the “Neolithic Revolution.” Traditional hunter-gatherer lifestyles were cast away in favor of more permanent settlements and a reliable food supply. Agriculture helped form cities and civilizations, and because crops and animals could now be farmed to meet growing demand, populations skyrocketed from around five million people 10,000 years ago, to more the more than seven billion people that walk this earth today.1
The Agricultural Revolution changes the society from eating a Paleolithic diet to eating cultivated foods. Paleolithic diet: includes gathering and hunting foods, like meat and berries. Cultivated foods are ones that they have to learn to grow. The understanding and expertise of cultivating food promoted advancement of human society, meaning that cultures were able to last longer and better. More food makes larger populations possible.
This research plans to compare and contrast the similarities and differences in agricultural development between the Jericho Valley,in present day Palestine, and that of the Andes Mountains. There are several aspects to compare in these regions. First and perhaps most obvious is the environmental differences of these regions as well as the ecological changes in each region has itself undergone. Closely linked to these environments is the native biological species, how these native species have been domesticated, as well as looking at what crop species have been introduced to the regions, and their effect on the native species. After explaining the differences in climate of the two regions it is important to understand who was doing the farming in these areas. This will be looked at in terms of cultural evolution, groups' social approach to farming and how that affects land use and technical procedure.

The Neolithic Period, which includes events from 12,000 years ago, is one of the most important revolutions to occur in history. The Neolithic lifestyle was established first in the Middle East, and then later in the Yellow river basin in China, which then spread over the years into the Western Hemisphere. During this time period, the domestication of plants and animals and the development of cities was starting to become more prominent and well known to many different civilizations across many different countries. It consisted of many changes in human cultures from a lifestyle of hunting and gathering to one of farming and settlement, which supported a larger population. As civilizations expanded, so did traditions and techniques. A major technological and cultural change to modern ways of thinking and acting began in Western Europe, and from these beginning new approaches to science and law spread quickly around the world. It spread to countries, causing more people to become aware of when and where to properly irrigate a crop, which type of area had the best security, and other common living strategies. Surely enough, many years later, traditions are the same as they were thousands of years ago. Although traditions may not have changed, the way people think about their God and religions have changed from culture to culture. Throughout the years, men and women from the Middle West completely changed their relationship from nature, to a more independent lifestyle; human beings learned to have more control over their lives.

Agriculture is the science and practice of producing crops and livestock. The primary aim of agriculture is to use the land to produce more abundantly to feed and clothe the world at the same time protecting it from deterioration or misuse. Humans had to improve agriculture as they became more dependent on food, creating a solitary evolutionary connection between plants and animals (Campbell and Reece, 2001). In this day and age, so many people have forgotten the authentic premises of survival. It is easy for some to believe that the grocery stores produce food and clothing is produced by shopping centers. These inaccurate presumptions are being made due to the lack of knowledge of how agriculture truly works. There are also significant differences in the levels of understanding between rural and urban communities.

Establishing an adequate supply of food is historically one of the fundamental challenges facing mankind. The modern food infrastructure employed by contemporary society is rooted in the creation and innovation of food production. Its effective utilization decreases the level of societal labor contribution required and discourages food shortage trepidation amongst individuals. It is hard to fathom given the current status of our society massive agricultural-industrial complex that the hunter-gatherer organization of society dominated for more than 99 percent of our existence (Fagan 2007: 126). The hunter-gatherer population was characterized by their primary subsistence method, which involved the direct procurement of edible plants and animals from the wild. The primary methods employed were foraging and hunting, which were conducted without any significant recourse to the domestication of either food source (Fagan 2007: 129). Food production is presumed to have emerged approximately 12,000 years ago as a system of “deliberate cultivation of cereal grasses, edible root plants, and animal domestication” (Fagan 2007: 126). The pronounced change from hunting and gathering to agriculture and domestication can be simplistically designated the Agricultural or Neolithic Revolution (Pringle 1998). The catalytic developments of the Neolithic Revolution mark a major turning point in the history of humankind. The resulting animal and plant domestication established the foundation on which modern civilization was built.
