Kale is a vegetable from the brassica family. It is hardy, cooler seasoned plant that grows best in the spring, autumn and winter months (March, April, May, June, July) as it can tolerate frosty weather conditions. Kale produces erect stems with large leaves that are rich in minerals as well as the vitamins A and C. Kale is popular in salads and other healthy food mixes because of its rich content. Although kale is a healthy product, it is not a popular plant to grow unlike other brassicas such as broccoli and cauliflower. Therefore it has a lower production value. This can be seen below in figure 1. Figure 1: Data table showing the production in tonnes, ending in June 2016. Many varieties of kale are used in Australia. These include ‘Vates,’ ‘Winterbor’ and ‘Red Russian.’ ‘Vates’ is a variety of kale that is hardy against cold weather, as it does not go a yellow colour. Figure 2 illustrates the blue-green colour and curly characteristic of ‘Vates’ kale. ‘Winterbor’ is also very similar to ‘Vates’ kale however, it is more frost tolerant. ‘Red Russian’ is a variety of kale that was planted at KSHS. Figure 3 illustrates the final product of ‘Red Russian’ kale that was planted on Tuesday the 8th of May.
