Often described as “Nature’s Perfect Food”, milk is the foundation of life for all newborn mammals (Velten 10). Milk has played a central role in the American cultural and industrial landscape over the last century, binding farms with urban consumers, placing regulators at odds with producers, and inspiring a constant dance between producers, consolidators, nutritionists and end-users about how it is marketed and sold (Smith-Howard 368). As I have become older I have gained a new yet expected intolerance to lactose. I never used to have a problem when I was little but as food economies are changing, so are our products. By the 1950s, consumers demanded standards for dairy products while also developing a growing concern about health issues caused by dairy fats (Smith-Howard 368). This puts all of us at risk for certain diseases including osteoporosis and heart disease. The females of all mammal species can produce milk but cow milk dominates commercial production. Cow’s milk was initially intended only for baby cows. It is the primary source of nutrition for young mammals before they are able to digest other types of food. Humans are the only species that drink milk after infancy.
It’s no secret that some food products out there are unhealthy, bad for the environment, and maybe even unsafe for human consumption. Although people are aware of the negatives behind these foods, they still make the conscious decision to consume them. At least they know what they are getting themselves into. For decades, people have been told that dairy products are not only a healthy food option, but necessary for a healthy life. That’s not entirely true. The dairy industry is killing animals, the planet, and consumers, and none of it would have to happen if people would stop purchasing and consuming dairy products.

From the beginning, American dairy farming been ever changing, from the beginnings where cows were milked by hand and the milk was transported by buckets to now where machines and mechanization has taken over. Since 1997 the total number of farms in America has decreased, including the traditional family farm. In “Restructuring America’s Dairy Farms” by John A. Cross he states Traditional dairy farms have between 20-49 cows, dropped significantly by 33.7 percent although this number has dropped small family farms still have 28.9 percent of the countries dairy cows. On the other hand, large scale operations which have 500 or more dairy cows have 41 percent of the country’s dairy cows. ] With Americas thirst for milk ever increasing with the growing population, farms are having to continue to evolve and expand or sell out.
