Magnus Nilsson Magnus Nilsson was born November 28th, 1983 in Jämtland County Sweden. Nilsson is one of the worlds finest chefs dedicated his life to cooking since he was three Cutting cucumbers with his grandma on her 50-acre farm, Nilsson also would be hunting and gathering on her farm two. growing up he wanted to be a marine biologist but decided to go to cooking school instead. After he attends cooking school he would move to Paris and find a job at the Michelin star restaurant LArestance. Nilsson would move back home to Sweden. Nilsson wanted to be a wine writer but soon after opens up his world famous two Michelin star exclusive restaurant that is one of the most exclusive in the world. After Nilsson graduated culinary school he makes the decision to move to Pairs like many chefs have done, but for Nilsson, it was very hard for him to find a job because he did not have a good grasp on the French language. Nilsson would send his resume where ever he could till he struck gold and landed a job at L’Astrance under Pascal Barbot. Nilsson would spend three years working under Pascal Barbot. While Nilsson was in the kitchen at L’Astrance the restaurant received its second Michelin star. Nilsson and Barbot had plans to open their own restaurant ells where in France but because of the final crash Nilsson ended up going back to Switzerland and settled in Stockholm. After Nilsson return he hit a wall, He became frustrated with the lack of easily-acquired ingredients in Scandinavia. Ingredients which were more readily available in Paris. He also realized that many of the dishes he made while in Stockholm were of the same of what he made from L’Astrance. It seemed to Nilsson that all he was doing was regurgitating other people’s ideas rather than developing his own. This was such a crushing blow to him that he swore off cooking and turned to enology.
