One of the most stressed out individuals in the U.S are college students. With their busy lives and stress
many forget to eat. Meal prepping can help college student’s access healthy foods to remain active,
healthy and stress free. One of the biggest transition struggles of being a college student is time

More often than not students find themselves grabbing “on the go” foods that are processed
filled with fats, salts, and sugars because they simply do not have time. Thus we are left with one
question where can we find food that's less detrimental to a college student’s health.

should become a priority and many are learning that local food might be the best way to achieve this. So what steps can you take to achieve less-stress meals for better organization and time management? Very simple, you would usually meal prep on your off day, to organize and prepare for the week or the next few days. For an example, on Saturday when you go grocery shopping for the week you know ahead of time you need 3 meals to last you 7 days. You create a grocery list and calculate exactly how much you need of each food. ( for the end of the statistics) According to the American College Health Association, the percentage of overweight college students has risen from 27.4 percent during the Fall of 2006 to 29.2 percent during the Fall of 2011. This increase was caused by unhealthy eating habits, sedentary lifestyles, and food insecurities. A recent study published in the Journal of Nutrition Education and Behavior found over half of college students had high levels of "food insecurity," meaning they had limited or uncertain availability to healthy foods due to high costs, leading to a greater risk of malnutrition Food insecurities may lead to a series of problems related to academics, physical health, and emotions. In the past this was not a big issue since no one really went to college but today society realize that a college degree is essential if you want to get anywhere in your career. Nature and Science Food professor Nassima Alberti of City University of New York Lehman College said, “Ive looked at the Central of Disease of control data and saw no dramatic change on obesity , it's still the leading epidemic in the United States.” “ recommend meal prepping since you have more control what you put in your food, especially if your sensitivity to certain substances like gluten or if you're hypertensive.” Always aim to eat balanced and wholesome.
Some good choices are
choosing skim dairy products over 2% dairy or whole, brown rice over white rice, whole grain bread over
white bread, brown rice pasta or whole wheat pasta over white pasta, sweet potato over baked potato,
water over soda, and having raw nuts for a snack . However, some students don’t necessarily agree with
meal prepping .Hofstra University student Alexi Velasquez age 21 said “I think it depends on the
situation. It's more difficult for students who live on a college campus like me, where we have a meal
plan that already has money on it to pay for food on campus.”
Even with meal plans at college campuses, or food choices there is that concern that you don’t
know exactly what is in the food you are ordering. “I don’t believe that cafeteria workers are educated
in proper nutrition, where many of them believe that instead of baking instead of frying French fries
would offer a healthier alternative to students,”Alberti said. Different foods can be cooked
different ways to make them healthier or non-healthy. The way fries are cooked if you fry them sodium levels and fats go up as oppose to baking.” ”
...College students are the next generation of food consumers just starting to purchase and prepare their own food, setting purchasing habits that will follow them into their lives as they start their own careers. These habits will shape what food is in demand, and therefore what food is produced. Not only do college students hold financial power over the future economy, but they must make the decision of whether to become the next unhealthy generation, that will also indoctrinate their children to accept the level of food quality that is currently labeled as junk food as a standard level quality of food.
Nutrition and health have become more popular in today 's society. Our generation is becoming more and more indebted to the idea of being healthy and eating nutritious meals. However, in “The American Paradox,” by Michael Pollan he argues that our unhealthy population is preoccupied with nutrition and the idea of eating healthy than their actual health. He also mentions the food industry, nutrition science and how culture affects the way we eat and make food choices. While Pollan is right about all these factor that affect our eating habits, there is more to it than that. Convenience, affordability and social influence also affects our food choices making them inadequate.
Time is another big struggle for college students. I know the feeling of applying for classes because it’s tough to decide on if there’s time to get from one class to one another; also if there’s time to get a bite to eat. Wendell Berry’s “The Pleasures of Eating: In What Are People For?” article suggests taking pleasure in eating a few ways to help anyone be a healthier eater, but “time” is an obstacle for the solutions. First off, both Berry and actually Pollan suggest students grow their own food in gardens. Specifically, Berry says to “Participate in food production to the extent” and “You will be fully responsible for any food that you grow for yourself, and you will know all about it. You will appreciate it fully, having known it all
One factor of the freshman 15 is the student’s living environment. Students living on campus in residence halls are more prone to weight gain than students living at home with their parents or off campus (Provencher et al., 2009). This is due to the availability of food on campus at various universities that studies were held. When I arrived here at college I was extremely disappointed with the selection of food here in the cafeteria. I frequently found myself eating only hamburgers and pizza over and over again, simply because I did not like the other choices. About four months into the school year I had do go to the doctor for a virus and when the nurse weighed me I was a little surprised by what I saw. I had gained a little over ten pounds, close enough to what some refer to as the “Freshman 15.” It is a common fear among college students that they are going to gain fifteen pounds during the course of adjusting to college life. However experts have stated that the idea of the so called “Freshman 15,” is not that accurate. Every college student is obviously not going to gain fifteen pounds. However I believe that it is possible and it is a problem for many college students. College life completely changes eating habits among college students. Most students do not make the right choices about eating and exercising. College students across the country are severely unhealthy in their behaviors, and for some students the “Freshman 15” may be a reality.
With an unlimited meal plan and buffet-style meals, do we students know how big our portions should be? If we are accustomed to being served super-sized portions, we might not realize when we are serving ourselves over-sized portions in our dining halls. Like me, most Americans are unaware of the importance of eating a healthy diet and consume too many foods without the proper nutrients. Throughout my life I have been fortunate. I have not had any major health problems, and have been able to consume most foods without having to worry about gaining weight. These last two years, however, I started to gain weight and have become concerned with my diet. Obesity has risen over the years. The United States now has one of the highest obesity rates. Bad eating habits are usually the cause of this pandemic. For the past few decades, college dorm foods have led to these habits. The more unhealthy food choices are, the harder it is for people to resist these foods. Through life we have many different stages to where we are either settling down for a nice home cooked meal or we are constantly on the go, running around our hectic lives, eating very unhealthy foods. Especially in our college years, students are always on the go running to and from class grabbing a burger and fries from a campus restaurant or eating the microwaveable foods like ramen. Many people try to eat healthy, but always succumb to the stereotype that eating healthy is expensive and takes too much time. This is a common misconception because there are ways in which anyone can eat healthy and on a budget as long as they eat proper portions, eat the right kind of foods, and excessive.
The food I have consumed recently is my attempts to each healthy on campus, which is surprisingly difficult.
Especially if they are a full-time employee, full-time student, or a full-time parent. It’s a lot of work! Planning a healthy meal requires planning in advance. Many rely on grabbing something quick for the convenience of time. There should be more options for people to choose from in order to have something healthy. If the time allows prepare a healthy meal.
Previously to taking this class, I had never given much thought to my eating habits. I always thought of the way I chose to eat as one of those things I didn’t need to concern myself with too heavily now because I’m a young broke college student. The way I eat is pretty similar to the way most of my friends eat and when you live away from home, that seems like the norm for people in college. However, after applying what I’ve learned in this class to my life, I’ve realized that the dietary choices I make now affect not only my current health, but my future health as well. So overall, I would say that my eating habits are pretty bad, but I’m working on making them better.
