Healthcare providers particularly nurses operate in a health care environment that reflects the diversity and cultural ramification of the more prominent society. The diversity of clients is altered and related to culture, and other factors. Nutritional health issues are one aspect of care that needs to be recognized with sensitivity in regards to cultural differences (Dennis & Small, 2003). The author focuses on understanding Larry D. Parnell’s Model of Cultural Competence as a framework in facilitating the delivery of proper nutrition on clients with unique practices and beliefs.
According to WordWeb nutrition is the organic process of nourishing or being nourished; the processes by which an organism assimilates food and uses it for growth and maintenance. Culturally speaking, it is a label that determines our appertaining or distinctness from a group (Purnell, 2005). Michael Pollan, an American author, journalist, activist, and professor of journalism at the UC Berkeley Graduate School of Journalism (Michael Pollan), writes in his book In Defense of Food, the dangers of nutritionism and how to escape the Western diet and subsequently most of the chronic diseases the diet imparts. In the chapter “Nutritionism Defined” Pollan defines the term nutritionism. Pollan’s main assertion being how the ideology of nutritionism defines food as the sum of its nutrients, and from this viewpoint Pollan goes on to write how nutritionism divides food into two categories, with each macronutrient divided against each other as either bad or good nutrients, in a bid for focus of our food fears and enthusiasms. Finally, Pollan concludes that with the relentless focus nutritionism places on nutrients and their interplay distinctions between foods become irrelevant and abandoned.

Nutritionism is the ideology that the nutritional value of a food is the sum of all its individual nutrients, vitamins, and other components. In the book, “In Defense of Food” by Michael Pollan, he critiques scientists and government recommendations about their nutritional advice. Cultural Competence is important for many reasons. First, it can help develop culturally sensitive practices which can in turn help reduce barriers that affect treatment in health care settings. Cultural competence has a variety of definitions and, in health care, basically refers to the act of developing an awareness of yourself, your existence, your thoughts, and your environment and making sure that those elements do not unjustly affect the clients you serve (Giger, 2013). Nutritionism believers are so focused on the nutrients that food contains that they forget about all other aspects of food. The problem is that consumers rely on packaging to tell them what nutrients a food provides, since nutrients cannot be obviously seen, and they rely on science to tell us what nutrients are good and which are “evil”.
Cultural competence can be defined as using the ability of one’s awareness, attitude, knowledge and skill to effectively interact with a patient’s many cultural differences. Madeline Leininger, a pioneer on transcultural nursing describes it this way; “a formal area of study and practice focused on comparative human-care differences and similarities of the beliefs, values and patterned lifeways of cultures to provide culturally congruent, meaningful, and beneficial health care to people” (Barker, 2009, p. 498). The importance of cultural diversity in healthcare allows for the delivery of appropriate cultural autonomy. Showing respect for others will lead to trust between nurse and patient which in turn improves healing and health.

Primarily, the opponents of vegetarianism disagree with it's strictures on scientific grounds. “But of course,” answer the vegetarians “their own muse, science, silences those claims without effort.” No, in fact; studies indicate vegetarians are much more at risk for deficiencies in calcium, iron, zinc, and B-vitamins. Although many devoted vegetarians take supplements to counteract these deficiencies, the eventual lethality of an iron deficiency-related anemia, for example, completely debunks many vegetarian's claims that no meat is somehow “more natural”—if normal humans can't survive unaided after eliminating part of their diet, it can only be concluded that part of their diet was essential.
As a nurse strive to provide culturally sensitive care, they must recognize how their client's and their perceptions are similiar as well as different. Nurse enhance their ability to provide client-centered care by reflecting on how their beliefs and values impact the nurse-patient relationship. To provide appropriate patient care, the nurse must understand her/his culture and that of the nurse profession. Cultural biases can be particularly difficult to identify when the nurse and client are of a similar cultural backgroup. When we recognize and know a culture, we will know what is right for our patient, and thus may impose our own values on the client by assuming our values are their values.
