The first thing the Smarts will have to do is realize that starting up a food truck will be difficult. The energy and time to begin the startup will consume a lot of their personal time especially at first. A lot of time will be devoted at trying to obtain equipment and receiving permits for the cities they will cook in. This means their personal times will all be devoted in trying to make their food truck flourish. The Smarts must be able to accept this fate ahead of time if they hope to have a successful food truck business.

In operational management the goal is change materials into labor and change labor into goods with the intentions on making the highest possible profit. For this to be successful having knowledge of the supplies needed to make goods, information on labor within the business and sales on products is essential to make the proper decisions for your business. The proper organizational structure for the Smarts would the Matrix structure. This is because the company is smaller so to compensate for that the duties of the employees will have to be more than what would be normally expected. Since there are two owners this would make the business easier for the Smarts to manage with one person focusing primarily on sales and product numbers, while the other focuses primarily on customer service and quality of product.

Structure is a statement of the current affairs, not the ideas, intentions or improvement within an organization.
