In modern times, around two-thirds of American high school students continue their academic careers and enroll in college. This change in scenery results not only in a change in values and beliefs, but also in a change in the lifestyles of many students. Even though many high school and college students will tell you that they do not need their parents, most students do not and can not make all of the most beneficial decisions for themselves. This life style change contributes to one of the most widespread issues not only among college students, but among American people as a whole: weight gain. One factor of the freshman 15 is the student’s living environment. Students living on campus in residence halls are more prone to weight gain than students living at home with their parents or off campus (Provencher et al., 2009). When I arrived here at college I was extremely disappointed with the selection of food here in the cafeteria. I frequently found myself eating only hamburgers and pizza over and over again, simply because I did not like the other choices. About four months into the school year I had do go to the doctor for a virus and when the nurse weighed me I was a little surprised by what I saw. I had gained a little over ten pounds, close enough to what some refer to as the “Freshman 15.” It is a common fear among college students that they are going to gain fifteen pounds during the course of adjusting to college life. However experts have stated that the idea of the so called “Freshman 15,” is not that accurate. Every college student is obviously not going to gain fifteen pounds. However I believe that it is possible and it is a problem for many college students. College life completely changes eating habits among college students. Most students do not make the right choices about eating and exercising. College students across the country are severely unhealthy in their behaviors, and for some students the “Freshman 15” may be a reality.

With an estimated one in three American adolescents being classified as overweight or obese many parents are turning away from traditional lifestyle modification approaches to more radical methods of combating adolescent obesity. Excessive weight at young ages has been linked to a wide range of comorbidities including hypertension, type 2 diabetes, and elevated blood cholesterol which is connected to higher and earlier death rates in adulthood (Kelleher, Merrill, Cottrell, Nadler, & Burd, 2013). Since the early 70’s the prevalence of overweight adolescents has increased from an average of 5% to an alarming 18% with obesity being the number one health concern for parents trumping drug abuse and smoking (www.heart.org).

All or most of us have gone through it. The countless hours we spent filling out college applications, scholarship applications, visiting colleges, and taking the dreaded tests. Whether it was the PSAT, SAT, ACT, or other college entrance exams, it was a big hassle. After visiting such a great number of colleges, the advantages and disadvantages of the schools seemed to run together in my mind. The endless paper work and deadlines seemed as though they would never end. When I thought about college, it seemed like it was not real, like it was a figment of my imagination. I imagined what it would be like, wondering where I would go. The questions of "What did I want to major in?" and after I decided that, "What schools had my major?" circled around in my head. When filling out questionnaires for college searches I was asked about what size college I preferred, whether I wanted to be in a rural or suburban area. Did I really know how to answer these questions that would so greatly affect the next four years of my life?

Educational institutions have the potential to, first and foremost, educate and assist the young people of today with making the positive, healthful choices necessary to maintain good health. Over 4,500 students have been followed in recent research studies and these “thousands of sixth graders who participated in a school-based health program were less obese by eighth grade than a group of similar children who did not, according to a new study done for the National Institutes of Health” (Rabin). Schools need to create health programs focused on assisting all children suffering from being overweight or obese. Policies such as fitness programs, nutrition classes, and healthful meals can even impact every student by creating a strong foundation and awareness of the negative, long term effects associated with practicing unhealthy habits. People eat food every day without thinking twice about it, because it is a necessity for us to live. How often do you think about what is in the foods that you eat? How many calories does it have? Are there any vitamins and minerals in it? Is it high in fat? For most of us and especially college students who live a busy life on the go, the answer to that question is probably no. Since becoming a recent graduate of Indiana University of Pennsylvania Academy of Culinary Arts, I have been more interested in food and what people are eating. Also since more young Americans are becoming obese I want to find out what they are eating and where. Going to college and seeing how students have poor eating habits I want to find out why they are eating this way. Is it because they are away from home for the first time? Or is it because that is the only food that is available for them? I also want to find out if students would eat healthier if it was provided for them? My hypothesis is that students eat unhealthy because it is more convenient for them. There is usually no time to cook a homemade meal and most college students are always in a hurry so it is easier to pick up takeout. Also most college students don’t know how to cook. I also believe that most college students don’t care if the food is unhealthy for them, as long as it tastes good. Hopefully, in the following pages I will uncover the wide world of college eating.
The Effects of a College Environment on a Students Health Introduction When one goes away to college, their life changes dramatically. They are forced to make changes in their own lives in order to adapt to college life. When one is in high school and living at home, their eating habits and personal hygiene practices are for the most part controlled by their parents. They are told what to eat and when to eat it. They are told to keep their room clean and to take their vitamins, etc.
College students struggle to find accessible healthy meals. This inaccessibility may derive from insufficient funds, scheduling or the inability to cook. In Owensboro, the cheapest foods tend to contain additives and unnecessary byproducts. Healthy foods sit on the shelves, students struggle to afford the fresh foods or cannot cook with them. A young person may leave healthy options at the store for convenience food sources often results in said person eating an unhealthy diet. Finding healthy foods with a college time schedule and budget presents a challenge to many students. Students attempting to eat healthy on a shoestring budget, and cook a meal on a tight schedule often give up. Many surveyed college students eat less than 2 servings of vegetables a day (Rao 1). During their college years college students develop eating habits that can follow them throughout their lives. Eating fruits and vegetables contributes to healthy young adults and possibly promotes emotional well-being (White 1). Many college students eat out because it is cheaper and faster than eating at home. Processed foods tend be more available and cheaper, activly going out and buying better foods tends to be more expensive.
