When was the last time you ate at a fast food restaurant? When was the last time you actually ate something healthy? Most people are now eating more processed food than they are eating actual meals. In Michael Pollan’s Essay, “Escape from the Western Diet” he attributes the “Western Diet” as unhealthy processed food. Pollan fundamentally believes that Americans need to get away from the trend of consuming processed food because it inevitably makes the individual sick. He describes the conditions that dictate what Americans believe they should eat. The conditions include the scientific field and their unrealistic nutritionist theories, the food industry backing said theories by producing commodities, and the medical industry providing medicine to support those exact theories. Pollan concludes that in order to escape this diet, people must make an effort to actively participate in researching what it is that goes into their body. Sequentially, Pollan reveals his own regiments for evading the western diet as well as the nutrition theories put into place by scientists.

This in turn afflicts Americans with chronic diseases like diabetes and other ailments. Pollan states that despite other countries having their own unique brand of unhealthy food; they don’t seem to have an epidemic of Western diseases. To counter these diseases, Nutritionists are advocating for singular nutrients that would supposedly make Americans healthier. This allows the food industry to commercialize these nutrients and tactically advertise. “Much nutrition science qualifies as reductionist science, focusing as it does on individual ingredients (Such as certain fats or carbohydrates or antioxidants) rather than on whole foods or dietary patterns” (420). Pollan advances further with claim and states that the scientific theories conflict with each other “the scientists who blame our health problems on deficiencies of micronutrients are not the same scientists who see a sugar soaked diet leading to metabolic syndrome and from there to diabetes, heart disease and cancer” (421). He argues that there is a cognitive dissonance in the nutrition field. On one hand, health problems are blamed on a deficiency of nutrients and on the other hand, scientist believe that sugar soaked diets are the culprits of health problems. By explaining these theories, Pollan comes to the result that these theories were sheer interpretations to what western diseases were. In extension to the contradicting theories, Pollan digs deeper to illustrate how these theories not just the food industry but the medical industry.
Pollan witnesses “For the medical community too scientific theories about diet nourish as usual. New theories beget new drugs to treat diabetes, high blood pressure, and cholesterol” (422). Essentially, Pollan is informing the readers that the health industry is capitalizing off the theories publicized by producing medicine to make up for the cut down nutrients. Furthermore, Pollan states that the food industry releases a new wave of products to a new line of products to rival with the new theories specialized for the western diet. He remind the reader to do their best to escape the western diet despite how hard because these industries are only out for
profit.(422).
Michael Pollan, an American author, journalist, activist, and professor of journalism at the UC Berkeley Graduate School of Journalism (Michael Pollan), writes in his book In Defense of Food, the dangers of nutritionism and how to escape the Western diet and subsequently most of the chronic diseases the diet imparts. In the chapter “Nutritionism Defined” Pollan defines the term nutritionism. Pollan’s main assertion being how the ideology of nutritionism defines food as the sum of its nutrients, and from this viewpoint Pollan goes on to write how nutritionism divides food into two categories, with each macronutrient divided against each other as either bad or good nutrients, in a bid for focus of our food fears and enthusiasms. Finally, Pollan concludes that with the relentless focus nutritionism places on nutrients and their interplay distinctions between foods become irrelevant and abandoned.
Pollan used the technique of ethos in order to appeal his trustworthy to his audience. Michael pollen organized his argument very well. He builds the arguments, by going through and describing the facts and claims he made regarding the western diet, followed by reasoning which made his argument trustworthy, like first he made claim that “stop eating a western diet” After that he gave reason for his claim that why we should escape western diet. He mention that “We should escape the western diet because western diet is a processed diet which has more carbohydrates and less micro nutrients which are the cause of many harmful diseases in United States” Pollan explain that lack of micro-nutrients, omega-3 fatty acids are the main cause of many chronic diseases in our country. The food industry and medical community manipulate us to believe we are escaping the Western diet but to only find out that we are right back to where we started. These stores are run by so-called health food experts. Freedman makes himself distinguishable himself from the position of Michael Pollan and his adherents. His adherents are known as Pollanites. They are the people who believe that processed food is the reason we have health and obesity issues.
When we think of our national health we wonder why Americans end up obese, heart disease filled, and diabetic. Michael Pollan’s “ Escape from the Western Diet” suggest that everything we eat has been processed some food to the point where most of could not tell what went into what we ate. Pollan thinks that if America thought more about our “Western diets” of constantly modified foods and begin to shift away from it to a more home grown of mostly plant based diet it could create a more pleasing eating culture. He calls for us to “Eat food, Not too much, Mostly plants.” However, Mary Maxfield’s “Food as Thought: Resisting the Moralization of Eating”, argues differently she has the point of view that people simply eat in the wrong amounts. She recommends for others to “Trust yourself. Trust your body. Meet your needs.” The skewed perception of eating will cause you all kinds of health issues, while not eating at all and going skinny will mean that you will remain healthy rather than be anorexic. Culture creates food preferences which make patterns of food choices, making everyone 's selection different. The Western Diet mainly consists of fried foods, refined grains, sugar, high carbohydrate and fats, and meats (3). It has been hypothesized that having a Western Diet increases one’s chances for developing depression. There has been a great deal of research into why the western diet increase’s one chance of having depression. A common sense reason maybe that the Western Diet consisted of large amounts carbohydrates, fats and sugars which promotes obesity and then causes depression (1). More scientific evidence suggest that having a improper diet like the Western Diet negatively affects peripheral and central dopamine, which are neurotransmitters (chemical which transmit signals across the synapse from the nerve cell to the target cell) directly linked to the mental health of the brain and are negatively affected by high fat diets (4). Research has also suggested that having a poor nutrition status such as lacking folate (a natural water form of vitamin bg which is crucial for many of the bodies processes) and key vitamins like vitamin b12 significantly increases the risk of depression in elderly people (5). Research into the topic of dietary habits and mental health is very crucial with the growing rates of obesity and depression in the United States compared to the rest of the world.
