Acidity is a measure of the ph or hydrogen ion potential in a solution, if something is more acidic than it can give more hydrogen ion to other substances. A pH scale is how much a substance is willing to receive or give hydrogen ion. Substances that are very acidic are close to 0 on the pH scale. Substances that are close to 14 on the pH scale are called bases. Tannins are compound which are in grapes, they make wine taste drier and feel drier in someone's mouth. Tannins are used in color dyeing and because of this they can stain cotton fabric more quickly and more deeply. Cotton is porous which means the wine can go in it more deeply. In the span of only a few pages, L.B. Church has given us an overview of the winemaking process. He has done so with sufficient detail for those in the chemistry community to follow along, yet still in a cursory enough manner as to not bog them down with the unnecessary. Written as if it were the procedure of an experiment, he has given enough information for the experiment to be repeated, tested, validated and improved upon. And that is almost assuredly his goal from the very beginning, as it must be for any published author in the chemistry community.

The obesity epidemic is one of the most pressing issues at this point in both American society and U.S. public policy initiatives. According to the Center for Disease Control and Prevention 35.9% of U.S. adults over the age of twenty are obese (CDC, 2013). The CDC further notes that 69.2% of U.S. adults twenty years of age and over are overweight (this percentage includes those who are obese). The obesity problem is not exclusive to the adults in the U.S. The CDC notes that 18.4% of adolescents between the ages of 12 and 19 are currently obese (CDC, 2013). These statistics illustrate the severity of the obesity epidemic in this country, but what can be done to address or even correct this problem? Many people have proposed solutions, but few are as radical as the proposal from Michael Bloomberg (the New York City Mayor) in 2012.

The next generation of adults are in danger if they let alcohol control them during high school. While some parents can control their children or not, underage drinking is a problem everywhere.

Bakker, J., Ronald, J., & Clarke (2011) found that wine’s color is determined by the choice of grape and the vilification process. The term “red wine” signifies more than color. Wagner, P. M. (2011) proposed that red wine may be extracted from the skins besides pigment that gives body firmness and astringency and also contribute to a wine’s aroma and ultimately its
