The film In Defense of Foods is based on the novel penned by Michael Pollan. He is not a doctor or nutritionist, but rather a writer who is researching which foods are truly the healthiest to consume. Throughout the documentary, he takes a look at the Western diet, and the foods that are currently being marketed as “healthy.” Some of these foods include granola bars and yogurt that are manufactured by large companies, where lots of chemical preservatives and sugar are added in order to please the consumer with shelf life and taste. Americans have tripled their sugar intake since the 1970’s, which can lead to an increased risk of type II diabetes. While there are some nutrients that are commonly agreed upon to be “good” or “bad” nutrients, there are many that have been both demonized and glorified over time. For example, William Keith Kellogg claimed that protein was bad for one’s health and promoted vegetarianism. Thus, at the beginning of the twentieth century, he founded the Kellogg’s company so that he could manufactured foods containing primarily carbohydrates, including corn and wheat flakes. There have also been claims that gluten, fat, and carbohydrates are bad for one’s health. In the 1950’s, Ancel Keys declared that all fat was a cause of heart disease after studying in Naples. In reality, it is really cholesterol that causes heart disease. In response to this information provided by Keys, the U.S. government released a statement to, “reduce all meat and dairy intake.” Yet, after complaints from the meat industry, the government altered the statement to, “choose meat and dairy that reduce saturated fat
