The transition of food across nations and cultures is a phenomena in itself. Dishes that are perfect in their own form are recreated into a new form of perfection. When people immigrate to the United States from other cultural backgrounds they bring their cuisine with them but, due to the demographics of the new country there might be limited access to traditional spices and flavors. With that, adjustments are made to dishes and new variations and fusions are born. The United States is the apex of mixing cultures, so it seems inevitable for cuisines to stay strict to their tradition without any outside influence. Fare eaten outside the states has many differences compared to inside the country. In the United States it is more apparent that food has no other use except for sustenance. Of course flavor plays a big role in what foods are majorly popular, but there is no stigma around certain foods that will provide and lead to “internal balance”. As a little Indian-American girl, Kothari curiously wanted to eat what of kids her age ate, tuna salad sandwich, hot dogs, and foods of such nature. Kothari describes her first encounter with a can of tuna fish as it looks “pink and shiny, like an internal organ” (947). The way in which we choose our foods can stem from events that occur during early childhood. When I lived in Jamaica as a child, I was only fed 'Jamaican style' cuisine.
