Self Portrait: Fruits and Vegetables Fruits and Vegetables are an essential food on our everyday lives. They help us maintain a healthy mind and body. The variety for both is so big that they could make great meals for a long period of time. However, for me it has always been a love and hate relationship. I am not a big fan of vegetables, therefore, my knowledge on them is limited. Because I am not interested in them, I am not eager to learn about them. Confusing, I know, but there is actually a small story to it. I was raised with my paternal grandfather and aunt until I was sixteen. I used vegetables for my neck, nose, ears, eyebrows, ponytail and part of my hair. I used peppers for the majority of my hair, but I also added a few fruits. I like my hair, but it’s a constant battle when you’re a mother of four. I like it when I have time to make it look decent but dislike it when I am on the run and bundle it up. I chose peppers because it is part of culture to always cook with them. Peppers are always added to our meals. It could be part of the main entrée or served with chips and salsa, but it’s never missing. My eyebrows are long thing green beans. I also added a bit of cilantro because even though my eyebrows are thin like the green beans they can get out of control if not maintained. I also used green beans for my ears but I placed them more outward. Our family comes from a generation of having long thin ears that are really unique by standing out. Squash was used for my nose because it is thin from the top and gets bigger at the bottom. My nose is the same way but I don’t like how big it can look at times. I used a variety of vegetables for my neck. The vegetables to me equal to healthy eating. I put them in my neck because when I do try to eat some of them I feel like I choke because I dislike them even though I know it is the best thing for me to
Michael Pollan states in his article “Escape from the Western diet”, three simple rules to follow to obtain a healthy lifestyle, “Eat food. Not too much. Mostly plants” (426). The food industry and medical community manipulate us to believe we are escaping the Western diet but to only find out that we are right back to where we started. Pollan provides some easy rules of thumb so that we aren’t caught up in the latest trends or diets but instead develop some eating boundaries that seem simple to follow on an everyday basis. When we think of our national health we wonder why Americans end up obese, heart disease filled, and diabetic. Michael Pollan’s “ Escape from the Western Diet” suggest that everything we eat has been processed some food to the point where most of could not tell what went into what we ate. Pollan thinks that if America thought more about our “Western diets” of constantly modified foods and begin to shift away from it to a more home grown of mostly plant based diet it could create a more pleasing eating culture. He calls for us to “Eat food, Not too much, Mostly plants.” However, Mary Maxfield’s “Food as Thought: Resisting the Moralization of Eating”, argues differently she has the point of view that people simply eat in the wrong amounts. She recommends for others to “Trust yourself. Trust your body. Meet your needs.” The skewed perception of eating will cause you all kinds of health issues, while not eating at all and going skinny will mean that you will remain healthy rather than be anorexic. Then, as Maxfield points out, “We hear go out and Cram your face with Twinkies!”(Maxfield 446) when all that was said was eating as much as you need.
Society has always been in the mindset of a white cis male, racist and sexist. In the article “The Globalization of Eating Disorders”, by Susan Bordo, talks about how the media portrays women in an impossible light and how women of color are overlook in eating disorders. The article “Saving the Life That Is Your Own: The Importance of Models in the Artist’s Life” by Alice Walker, talks about how women of color are overlook and not taken seriously in literature and how people need good models in life to do and become great things. They both have a common topic of that women of color are often over looked in literature and media and if women of color were truly portrayed in society then girls of all ages could really benefit from it.

One of the reason’s why I felt my nutrition needed to changes is because nutrition is a huge part of a healthy lifestyle, the way that we eat and what foods we consume can have a huge impact on our everyday lives. Nutrition plays a huge role in multiple facets of a person’s life energy, health, skin, weight, confidence, and more making having a good control on your eating habits extremely important. Vegetarianism is the dietary way of avoiding animal products. Many individuals are replacing animal products in their daily meals with different kinds of vegetables. They believe that eating non-animal products is an ideal way of cleansing out the toxins in their bodies. Moreover, most people consider vegetables as the best foods that can help them lose weight without causing any side effects. Although many people believe the animal products are the best foods for providing the basic vitamins in life, the UTA community should be interested in vegetables because eating vegetables help people maintain a healthy body, growing vegetables would also help our world reduce pollution, and more animals will not be killed for food.

My favorite meal is the chicken fettuccini pasta. I chose this dish because I can never stop eating it. The meal is made up of warm tenderized chunks of chicken, delicate smooth creamy white sauce, and many varieties of sliced up vegetables. However, when I was a child vegetables has always been difficult to eat. It prevented me from enjoying my favorite meal because I would always have to take out the mixed vegetables in the meal. As a child I 've tried avoiding vegetables, but was found throughout the school cafeteria 's food, my mother 's cooking, or many fancy restaurants. There was nowhere to run. Over the years, my mother knew I was struggling to eat vegetables. She worked very hard by coming up with her own recipes in order for me to eat healthy. From mixing in the vegetables into the meals I usually eat or to trick me into eating meat but was actually vegetables. Soon later I came to realize how much effort she has put into the meals. All those hour and hard work my mother put it allowed me to enjoy my favorite meal again.
