Chicken is a common food that is consumed by Americans daily. Whether, it is fried, baked, roasted, or grilled, chicken can be prepared many ways. A family favorite is homemade chicken nuggets. Whenever we are having friends over I am always asked if I will be making my homemade chicken nuggets. Friends have said in their opinion, that they are better than any restaurant or drive thru chicken nuggets that have had. Well, almost, we have a few things to do before the actual cooking part. First, we need to heat the corn oil. If using a fryer simply fill the fryer half way, plug in and turn the temperature to 350°. If using a deep-frying skillet fill the skillet about half way and turn burner on high. Using corn oil is more beneficial than vegetable or canola oil and using peanut oil could be dangerous if someone who eats the it that has an allergy to nuts. Olive oil will start to burn and smoke and is not ideal for frying foods. While the oil is heating take the chicken form the refrigerator. Place the colander in the sink and empty the buttermilk, chicken mixture into the colander. Allow the buttermilk mixture to drain for a few minutes. In the container that just had the buttermilk and chicken in crack the four eggs and use the fork to scramble. Place the chicken back into the bowl that now has the eggs in it. Use a spatula to mix the egg mixture over the chicken. Once it is completely covered pour into colander and allow to drain. In a separate sealable container empty the flour, old bay seasoning, season all, garlic powder, onion powder, and pepper and mix well.
