Jacob Lamontagne Mrs. Cardosi Honors Biology 25 September 2016 Nutrient Lab Report Analysis The purpose of the nutrient lab was to learn about the nutritional architecture of the foods most prevalent in the American diet. The hypothesis of the lab was if you add a specific reagent then you could test the presence of a certain type of nutrient. The hypothesis in the lab was tested by using five reagents and ten items of food. To answer the hypothesis the scientists used 5 reagents to test for known nutrients in specific types of food. These five reagents were used to test for proteins, vitamin c, starch, chloride, and simple sugars. Then the ten foods were put in to a food processor with water to become a paste. This makes it so that to have good health one must eat a balanced mixture of foods to meet the body’s entire requirement for nutrients. This relates to other findings in this field like the obesity trend. Based on statistics, in the year 2024 more than 40% of Louisiana’s population would be obese, which is very problematic. The Nutrient Lab relates to this because in the southern United States, this American staple diet thrives. By being heavy consumers of these high in fat and salt staple food items, the health in those states is very detrimental. If the people in these states were to move from these staples, the percent of obesity would most likely drop, leaving the populace healthier. A way the procedure could have been improved to reduce error would be to find a better way to test for lipids, and to not combine all the foods with water to make the food paste that was tested. Michael Pollan, an American author, journalist, activist, and professor of journalism at the UC Berkeley Graduate School of Journalism (Michael Pollan), writes in his book In Defense of Food, the dangers of nutritionism and how to escape the Western diet and subsequently most of the chronic diseases the diet imparts. In the chapter “Nutritionism Defined” Pollan defines the term nutritionism. Pollan’s main assertion being how the ideology of nutritionism defines food as the sum of its nutrients, and from this viewpoint Pollan goes on to write how nutritionism divides food into two categories, with each macronutrient divided against each other as either bad or good nutrients, in a bid for focus of our food fears and enthusiasms. Finally, Pollan concludes that with the relentless focus nutritionism places on nutrients and their interplay distinctions between foods become irrelevant and abandoned.
Thorough analysis of the graph displayed enough evidence suggesting that an increase in substrate concentration will increase the height of bubbles until it reaches the optimum amount of substrate concentration, resulting in a plateau in the graphs (figure 2). Hence; supported the hypothesis.
This experiment will determine the levels of Vitamin C present in each of the different fruit juices selected. The level of Vitamin C will be compared between each fruit juice to determine which one has the highest amount of Vitamin C. Several drops from one fruit juice will be mixed into an iodine solution then repeated with a different fruit juice. With every drop of fruit juice a chemical reaction occurs and the process continues until the solution becomes colorless. The reaction will vary in according to the amount of Vitamin C present in each one of the different fruit juices.

Pollan believes that Americans rely on nutrition science, the study of individual nutrients like carbohydrates, fats, and antioxidants, to fix the Western diet because it is the best source that exists. However, scientists have developed conflicting theories that confuse people to conclude as to how the Western diet causes disease, such as heart disease, diabetes, and cancer. Pollan disagrees with any type theory and instead blames the food and health industries who take advantage of new theories but do not to fix the problem of the Western diet. Proper nutrition is important in maintaining a long and healthy life. Most Americans are rushed due to their busy work schedules, and do not take the time to plan their diets properly. Like me, most Americans are unaware of the importance of eating a healthy diet and consuming too many foods without the proper nutrients. Throughout my life, I have been fortunate. I have not had any major health problems, and have been able to consume most foods without having to worry about gaining weight.
Spurlock wanted to see if his health would be at risk if he ate McDonald’s every day for one month. He started a thirty day experiment in which he ate McDonalds for breakfast, lunch, and dinner. One of the restrictions in this experiment was that he could only walk so many miles a day (5,000 steps per day) to replicate the exercise that an average American gets on a daily basis. In addition, another restriction was that he could only super-size his meal when asked. He also had to eat everything on the menu at least once. His objective was to see what happened to his health after thirty days of eating McDonalds. Since 1916, the United States Department of Agriculture (the government agency responsible for all U.S. policy regarding agriculture, food, and farming) has revised their recommendations several times. Unfortunately, money talks and the USDA’s recommendations are based on outdated science and are influenced by people with business interest. Even so, its recommendations are considered almost “holy” by physicians, nutritionists, and dieters, but in reality, they are the root cause of the problem. A single visit to our local public school cafeteria and it will become clear that they do not have the best interests of the children at heart. What they are feeding our innocent children is preposterous. Doctors, the people we trust and expect to be “the experts”, do not know much about the subject of nutrition. For years, I have been eating what I want. Food choices are a significant factor that affects our health. What we like or crave, often, is the determining variable in what we eat. Finding the right balance of food choices is the key factor in improving our health benefits. Choosing nutrient-dense foods will provide more nutritional value than foods that are found to be low in nutrient density. Making the right choices in foods, however, is extremely difficult. Often, I find myself enthralled in the latest fad, not considering the subtext of the foods I am eating, such as nutrients, vitamins, healthy fats and unhealthy fats, cholesterol and minerals. In epidemiological studies, different dietary investigation tools were designed to assess the nutritional status in individuals and populations, nutrition monitoring and surveillance and diet-disease research (Friedenreich, et al., 1992, Taren, 2002).
Overall I think I carried out the experiment in a precise way and I took my time trying to make all my measurements as accurate as possible so that my data is reliable. Next time I will do more tests instead of just 3 so I have more results and so I could get a more accurate average. I will also do the experiment with more fruit juices to see if there are other fruits with a higher content of vitamin C. I will do an experiment to see if there is a difference in Vitamin C levels between fresh juice and store bought juice. I can also test different brands of juice to see if they have different levels of vitamin C.

Principle: The milk is mixed with H2SO4 and iso-amyl alcohol in a special Gerber tube, permitting dissolution of the protein and release of fat. The tubes are centrifuged and the fat raising into the calibrated part of the tube is measured as a percentage of the fat content of the milk sample. The method is suitable as a routine or screening test. It is an empirical method and reproducible results can be obtained if procedure is followed correctly.
