As a child, I remember that my breakfast range from something light as yogurt or cereal to a huge spread of food. For example, the coastline has great seafood and the south has awesome comfort food. Colombia is divided into 32 departments, or country subdivisions. Each area has unique dishes that reflect their department.
My parents both worked full time and most of the time we had beans and rice for breakfast, lunch and diner, however every Friday night at about 7:00 we would gather our things and head out for the taqueria at the corner of the street. We could smell the cooking meat and grilled onions before we could even see the stand. Once we arrived we sat on the worn out green seats and ordered, as I was merely three years old, I could only eat about a taco before becoming full. This research project is focused on how food exists to not only help us survive, but also for helping to create and shape identities, especially the national identity for Mexico. Growing up, spicy foods weren’t one of my favorite flavor profiles in dishes. I tend to avoid such cuisines that use bold spices and ingredients such as curries and moles, and “jerk” anything. As my palate became more advance I am now able to tolerate a little heat and kick with my food. Speaking of which, the cuisine of the southwest region of the United States has really become one of my favorite cuisines. The American family has certainly transformed over the past 20 years. Whether someone lives with two parents or one parent they are probably working full time jobs to provide for the family. Some benefits of cooking at home are you can control what ingredients you use when cooking, and portion control. An up to date study on obesity shows nearly 15 percent of U.S children and roughly one-third adults are obese (Holguin, 1). Families that eat fast foods these same foods are high in fats, sugars, carbohydrates and these eating habits will eventually lead to obesity. Everyone has to be responsible for their own actions, but when it comes to children they will eat whatever the parents’ puts in front of them. It is up to parents to lay the foundation of healthy eating habits at an early age. If fast food restaurants did not exist then obesity should be less of a threat to our health.
