Home bakers have long known the quality of the mixer utilized for mixing recipe ingredients, has a direct impact on the quality of the finished product. One of the most significant appliances in the kitchen of the home baker’s arsenal is the stand mixer. The mixer must be able to blend, mix, and whip the most delicate items without crushing the delicate textures and air pockets. The culinary world is filled with talent, technique, and competition. When there’s only so many ways to poach an egg, chefs are pushing boundaries to free themselves from the box. New recipes are popping up all over as chef’s experiment with their palettes, some more successful than others. Technique after technique is being refined and tweaked to produce interesting and unique food. Hundreds of chefs make their mark and stand out from the crowd each year. Furthermore, during Child’s life there were technological and world events that influenced her as a chef and her impact on her audience. One of the most important technological advancements during her lifetime was the invention of the free standing mixer, which was created to be an at-home and industrial appliance allowing mixing ingredients to be much more convenient than other by-hand methods. In 1908, Herbert Johnson created the first electric standing mixer for the Hobart Company and in 1919, Hobart Company presented the KitchenAid Food Preparer, a free standing mixer for homes throughout the United States. In the food service industry, it is vital to have a professional food processor that keeps up with a restaurant’s demands, no matter how intensive they may be. A professional food processor is costly, however, making its purchase an investment. Not only must the best commercial food processor perform, it also must be able to last a long time.
Many people dine at restaurants’ and hotels’ but are unaware of the system utilized within the kitchen. They simply go to enjoy the food, unaware of how it is prepared. Interestingly, the kitchen is run by a Kitchen Brigade system (Brigade de Cuisine) which is a hierarchy system invented by Georges Auguste Escoffier to ease and simply the operations of a kitchen. There are two types of kitchen brigade which are the classic kitchen brigade and the modern kitchen brigade. This report aims to explain each of the system, the individuals involved in it and the responsibilities of each person.
