However, we do know coffee bean plants grow wild across Ethiopia and Brazil. In its most basic form, coffee is a cherry-like fruit in which the coffee bean is found in its center. It was not until the 13th century when we began to roast coffee beans. To transform these seeds into a brew, they are tossed in a coffee roaster. The heat from the coffee roaster evaporates moisture in the seed and reduce complex sugars into smaller sugars so the consumer can taste it easily. Some of these sugars caramelize and if roasted too long, will become burnt and smoky. The key to quality roasting is when the coffee beans have a balance of oils, fruit acids, simple and caramelized

For many of us, our mornings are perfectly diabolical without at least a cup or two or three of the stuff. Chapter 1 - Introduction 1.1 Background of coffee What is coffee? A coffee pruned short in cultivation, still capable of growing more than 30 feet high, a coffee tree is covered with dark-green, waxy leaves growing opposite each other in pairs. Kato received a patent for his invention and the instant coffee history was made. He then set up his own coffee company named Kato Coffee Company in Chicago (Stefanie, n.d.).

Indonesia is preponderated by small 1-2 acre coffee farms which produce beans that are rich, full-bodied, and have mild acidity. Also, farmers who want to sell their beans at higher prices can age them. The coffee is left to age in a warehouse, and Indonesia’s damp, warm climate gives the beans an even deeper body and less acidity, a process that is unmatched, even with contemporary agricultural
