The Controversial Topic of Food Allergies
Food allergies are the most controversial allergy-related topic right now. It's controversial because of several facts like:
* many kinds of bad reactions to foods have nothing to do with allergies
*
* foods are often for symptoms that result from each other
*
* children often out grow sensitivities to foods
*
* even if you're allergic to certain foods, you might be able to eat small amounts of the food without any reaction
*
Some of the most common foods that cause symptoms like severe stomach pain, diarrhea, hives, swellings, wheezing, vomiting, hayfever symptoms, excema and wheezing are nuts, chocolate, strawberries, milk, wheat and corn. There is one term in particular that can be used to clear up some confusion about various kinds of reactions called food allergies. That term is called "food intolerance" and it applies to abnormal reactions to foods regardless of the cause.
Food intolerance may cause the release of amines (histamine, dopamine, etc.) from cells. Amines are found in food and can affect many body functions like the size of the blood vessels, blood pressure control, heart rate, brain activity, and nerve function. Histamine is the most common mediator. It also is a compound that causes allergic responses. Foods high in histamine are red wine, sauerkraut, strawberries, some cheeses and alcoholic beverages. Dopomine comes from fava beans and octopamine comes from some citrus fruits. Beta-phenylethylamine comes from chocolate. If your body is depleted or has an overabundant amount of amines you might have neurological or psychological problems.
There are many allergic reactions that come with food allergies. The main one is called anaphylaxis. This fatal reaction is a violent allergic reaction that occurs thought the body causing nausea, vomiting, swelling, chest pain, choking and collapse.
"Another painful allergic reaction is called Celiac Disease. This reaction is caused by a chronic adverse reaction to gluten, a protein found in grain, wheat and corn. Children who have this disease, are sickly, have chronic diarrhea and fail to grow properly until all gluten containing products are taken out of the child's diet" (Edelson, 49).
You probably didn't even consider food additives as being something that would cause an allergic reaction. Well this food additive named Tartrazine, better known as FD&C (Food, Drug & Cosmetic) No. 5 has been suspected of creating asthmatic attacks & chronic hives. Tartrazine sensitivity is also linked to aspirin sensitivity.
Following my first sip of milk at the age of one, with the resulting hives and coughing that ensued, I involuntarily joined the community of fifteen million Americans afflicted by food allergies. Living everyday with additional allergies to peanuts, tree nuts, and shellfish has, out of necessity, sharpened my compulsiveness with ingredients and food preparation, but furthermore has spurred me to intervene on behalf of fellow members in this emerging epidemic. Celiac Disease is an inflammatory disease that destroys the lining of the small intestines and prevents the absorption of nutrients and vitamins into the system. The patients' health suffers; their digestive system is unable to process gluten foods that contain wheat, barley, and oats. The cause of this disease is unknown; however, environmental factors and a genetic predisposition are suspected.

I’m sure if people without food allergies were more aware of the potential harm their daily snack could cause to someone else, they would start to use a lot more caution.

Nutritionism and Today’s Diet Nutritionism is the ideology that the nutritional value of a food is the sum of all its individual nutrients, vitamins, and other components. In the book, “In Defense of Food” by Michael Pollan, he critiques scientists and government recommendations about their nutritional advice. Pollan presents a strong case pointing out the many flaws and problems that have risen over the years of following scientific studies and government related warnings on the proper amount of nutrients needed for a healthy diet. Pollan’s main point is introducing science into our food system has had more of a negative impact than a positive one, we should go back to eating more of a traditional diet. True food allergies are rare. The FDA (U.S. Food and Drug Administration) estimates that only 2% of the adult population of the United States is allergic to foods. Further, only eight foods cause 90% of all food allergic reactions. They are milk, egg, wheat, peanut, soy, tree nuts, fish and shellfish (Food Allergy Network). Many reactions to foods are really intolerance (reaction of the metabolism due to a chemical deficiency) rather than allergy (reaction of the immune system). Many infant allergies, which are later outgrown, are thought to be the result of immature immune systems. However, other allergies become stronger as the person ages and inadvertently becomes more exposed. One report on KCBS radio indicated there may be a link between mothers who ate peanuts during pregnancy and their children’s subsequent allergies.
Celiac Disease. It is a bit of a buzz word, with many people believing this disease to be a joke. The celebrities are participating in a fad, that gluten-free diet, it must be so healthy for them and that must be why people with “celiac disease” are eating it too. Except they are not. Celiac Disease, or CD, is a disease that affect the small intestinal mucosa due to inflammation. The inflammation is due to the body attacking itself in the presence of gluten. CD cannot be prevented and there is no true treatment. The inflammation destroys the small intestine and very little food is digested and absorbed. Patients lose weight and are constantly tired. “Just take the bun off; it will not hurt, right?”
Gluten is a protein found in common grains such as wheat, barley, and rye. Those affected with allergies to these foods (the most serious allergy being Celiac Disease) must follow a strict gluten-free diet in order to experience relief from their symptoms. Despite eliminating the ingestion of the allergen, gluten-free individuals begin to suffer from adverse side effects. In recent years, many Americans have begun to live an entirely gluten-free lifestyle with no medical necessity to do so. Many believe it to be a healthier diet, and even more believe it is an effective weight-loss tool. With this growing fad of adopting a gluten-free diet, under the false pretenses of varying health benefits, many Americans are exposing themselves to unnecessary health risks, over-priced and narrowly available foods, and an overall depletion of dietary needs.

Human race is known to have developed numerous allergies to various known and unknown allergens. An extreme allergic reaction which can be “life-threatening”. (Mydr.com.au, 2014) is referred to as Anaphylaxis.It is a “medical emergency”(Lloyd & Sisman,2013).Statistics indicate that maximum deaths occur due to allergic reactions of various medicines. The other causative agents can be insects, food, latex, hair dye, etc(Lloyd & Sisman,2013). The most common trigger to stimulate anaphylaxis among children are food products such as peanuts, dairy, seafood etc. Exposure to any of these allergens can result in severe anaphylactic attack within 20 minutes.(Australian Resuscitation council, 2012).However the doctors discuss the history of symptoms occurring in children suffering with peanut allergy before declaring them to be anaphylactic and prescribing medication. (Unknown, 2014). Symptoms of anaphylaxis may occur in varied forms depending upon the severty of the reaction. For instance in mild cases swelling of lips, eyes or face occurs along with hives, rash, tingling of mouth and vomitting accompanied with abdominal pain. Nevertheless in extreme conditions the former symptoms may be accompanied with noisy breathing, wheezing, hoarseness and unconsciousness. (Lloyd & Sisman,2013).
Patients who usually have allergies suffer from many symptoms due to the allergic reaction(s). Normally, your immune system protects you against invading agents such as bacteria and viruses. Otherwise harmless allergens (allergy-producing substances) cause your body to react as if they were dangerous invaders. In effect, your immune system is responding to a false alarm.
