The History Of the Fajitas
The first fajita was actually made in Texas? I thought it was mexican?
According to What’s Cooking America, the first fajita was made in West Texas around the 1930’s to 1940’s. Mexican ranch workers living in Texas were given the least desirable parts of an animal after it was butchered. This rough meat lead them to create skirt steak, which is usually used in fajitas.
Fajitas were too cool to just stay in Texas, so they went all over America!
According to Food Timeline, fajitas started in Texas and became popular all across America. By, 1985, fajitas were all the rage. The flavorful dish was cheaper than it’s competitors. It often came with a side of guacamole and salsa, which gave it so much tasty goodness

Back then, fajitas were created by mexican ranch workers when they got scraps from the animals butchered or now known as “skirt steak”. They used the unwanted parts to make a tasty and cheap dish. Now, in 2016, we make fajitas because we love the flavors. We make them the same way but not out of necessity.
Were fajitas a special dish…?
I wouldn’t say that fajita are very special. But, they are very popular. Traveling around America, These delicious meals changed over time adding on more and more different toppings and finding different ways to eat and make them. They are still very popular. It doesn't have to be a huge family gathering or on the holidays only. It was very easy for families to make so they made them a lot. The word “fajitas” comes from a word meaning belt. What?
The word fajita comes from the word Faja. The word Faja mean to take something and to wrap, belt or cover something. The connection with Faja and fajitas is that you take the tortilla . And you faja or wrap it around whatever you decide to put into your delicious
In the beginning, Burciaga provides a brief history when Taco Bell was established. First starting in Mexico City and then spreading throughout the United States, the chain sold “mild imitations of the real thing” (382). Many Mexican businesses and people protested against Taco Bell because unlike homemade tortillas made from hand, they used “prefabricated hard tortilla shells” (383) that tasted nothing like real Mexican tacos. Additionally, the restaurant also combines food and makes up names so that it appears different. From Enchiroto, a combination of a burrito and enchilada, to Cinnamon Crispas, known as bunuelos, Burciaga points out that “the Taco Menu can be a mystery if one is not familiar with the renamed food items” (383).
Two locally owned famous restaurants in Sedalia, Missouri, El Espolon and El Tapatio, are both recognized as quality, authentic Mexican restaurants that serve Sedalia with outstanding service and great food. After paying each establishment a visit this past weekend, I have discovered some differences and similarities in the two. Although many of my relatives have chosen El Espolon as their favorite, I found El Tapatio to provide a more ethnic experience with their excellent food, sharp service, and clean venue.
The food was homemade rice, beans, tortillas and enchiladas. American finger foods were also served. The Quinceañera transformed to a social event and celebration. Everyone started talking and laughing. Me being the outsider and non-Latino, everyone wonder who I was.

The history of the mariachi can be traced back to the sixteenth century and the days of the Spanish colonization. During this time, theatre was immensely popular. The instruments used in these theatrical productions included violins, guitars, and harps. It was to this time, and to these instruments, that the origins of the modern mariachi can be traced (Mexico, The Melting of Two Cultures, 1991).
The Gamba, or viol da gamba, is a member of the viol family. The viol family includes treble, alto, tenor, small tenor and bass viols. The viol da gambas were often played as a part of polyphony because their nasally tones were not easy to dance to.
Salsa comes from the South American region, mainly from the Spanish speaking countries(“History of Salsa Sauce”). Salsa is a well known dish that is made in many ways. In the original times, it was made with a coalescence of chilies, tomatoes, and other spices. The original way of making salsa has been altered since the beginning. It originated back in the times of the Aztec, Mayan, and Inca civilizations(“History Of Salsa Food”). According to “History of Salsa Sauce”, The origin of salsa came from the South American region, mainly from the Spanish speaking countries (Lifestylelounge,lifestyle.iloveindia.com/lounge/history-of-salsa-food). The Spanish people found tomatoes and they added the ingredient into the recipe.
Firstly, one aspect that is both Mexican and American is the cuisine. The original food for Mexico is very spicy and most of the time very colorful as well. Mexicans use spices, peppers, tomatoes, and cheese in many of the native dishes. They use an assortment of meat: pork, beef, lamb, and chicken. When Mexican restaurants spring up in the United States the food is toned down to appeal to Americans. The Mexican Americans use less spices to make the dishes milder rather than the hot, spicy native food. The food, still Mexican, takes on the likeness of American food. This is shown in the United States by all of the Mexican American restaurants such as Taco Bell. Therefore Mexicans have Americanized their food. “For Hispanics live on this side of the border, where Kraft manufactures Mexican-style Velveeta, and where Jack in the Box serves Fajita Pita.” (Rodriguez 131). Americans complement the Mexican style and the inverse.
Mexican food is influenced by the ancient civilization. For examples the Mayans ate corn tortilla with a bean paste that covered the tortilla. The Aztec found out that mixing and squishing different types of vegetables makes a savory appetizer they call salsa. They also learned how to make what are now called tamales. When the Spaniards came they brought over milk, rice and other products that were new to Mexico. But have now remained in the cuisine.
Flamenco is an individualistic folk art, a genuine Southern art form, which was mainly originated by Andalusian gypsies. It exists in 3 forms: El cante, song, el baile, dance and guitarrra, guitar playing. Its roots also are with Arabs, Spanish Jews and socially outcasted Christians. The flamenco essence is song, which is usually accompanied by guitar and improvised dance. Complex rhythmic patterns and sophisticated footwork differs from other European dance forms.
Flamenco (may refer to ‘Flamingo’ - bird or the ‘Flanders’ region) originated (much later than Kathak) in 18th century Southern Spain-Andalucía . It was mostly performed by the Andalucía society that comprised Gitano (Gypsies). However, unlike Kathak, Flamenco dancers were from diverse professional backgrounds and the dance was not necessarily confined to a small group of people. Unlike Kathak, Flamenco dance lacked prestige because the Gitanos were discriminated and prosecuted because of their ethnicity. Flamenco mostly dealt with themes of hope/struggle/will power/bonding/patriotism - a representation of the general life of the gypsies. The early form of Flamenco solely consisted of verbal communication of stories carrying the mentioned themes.
Everyone has heard of McDonald’s, but where did this familiar name come from? When people think of American food, it is not uncommon for two golden arches to appear in their minds. This story began with two brothers Dick and Mac McDonald who owned and ran a small restaurant in San Bernardino, California during the 1940s. In 1954 a man named Ray Kroc came across these two brothers while selling multi-mixers and was impressed with the business they were running. The menu was compact, listing options for only a few burgers, fries and beverages, but the restaurant was effective in its operation. Ray Kroc pitched the idea of spreading McDonald’s restaurants across the United States and in 1955 he founded the McDonald’s Corporation. By 1960 he bought the exclusive rights to the name. Kroc was able to expand substantially on this small business so that by 1958 McDonald’s sold its 100 millionth hamburger. (“McDonald’s.com”)
However, the history of processed foods should not be ignored. In 1810, Peter Durand, an Englishman, developed the can (Short History of Processed Foods). In 1821, William Underwood, an ambitious young man in London, established a canning plant, which canned fruits, vegetables, and condiments (Short History of Processed Foods).
The Amazon region is considered the birthplace of the wild cacao tree. T. cacao appeared with the arrival of human species in South American. It have been suggested that T. cacao is the result of a cross between T. pentagona and T. leiocarpa. Cacao was not been selected for its seeds, but instead for the pulp surrounding them. Selection for the seeds begin in Mesoamerica. The seed pulp was used as a beverage. Cacao cultivation by the Indians, notably the Aztecs of Mexico and Mayas in Central America was established before the New World was discovered. The next question would have to be how did the cacao tree cross the sea. Christopher Columbus brought a cacao beans back to Europe from the Gulf of Honduras. This cargo of cacao beans were the first specimens to enter Europe. The Aztecs settled in Mexico two hundred years before Cortes conquest of Mexico.
